I made this bread this morning and it tastes delicious. I was worried that my starter wasn't growing, but on day 6, it floated! My bread had lots of air bubbles in it which was great, I made one error though, I think my dough should have been in the refrigerator for longer than 6 hours. When I scored the top of the bread it healed itself so the bread didn't rise as much as it should have. All is good though, it has a wonderful texture and flavor and my husband loves it. Thanks~!

82% hydration is high for a begginer. Instead I suggest 450 grams bread flour 350 grams of water + 25 when adding salt 50 grams whole wheat. Let rise for 4 hours, every 30 min, fold it for 30 seconds, then shape, place in basket and let rise for 4 more hours. Preheat oven to 500, with Dutch oven Place bread inside Dutch oven, bake 25 min covered, after 25 min lower to 450 and bake for 25 more minutes. Let it rest. Walla!!
