None. None of these women were Indonesian, were they? But again, why would you put shrimp paste in a _rendang_ people? 😵💫 I can imagine all the Minangkabau cooks shaking with anger watching this. Also, we wouldn’t describe _rendang_ as a curry because we have a distinction when it comes to the two. They’re probably Malaysian or Singaporean seeing how they disrespect the dish. Nah, mom's the best. 'Nuff said, fragrant, berlemak, manis and comforting because it tastes like home. I don't usually see much dried spice in rendang, cinnamon at most but usually fresh aromatics like galangal, daun kencur, daun limau, ginger, shallots. Shafali's rendang recipe seems interesting, not my go to, but interesting, she also has a misunderstanding of what rendang is, there's multiple ways to approach rendang and can be either basah or kering, not necessarily dry dry. Typically it's cooked dry because it's meant to be keep for longer in days past but there are wetter versions of rendang based on where the recipe has travelled to within the Indo-Malay region, but not wet like Jenny's, never seen a rendang that wet either. Also, no fresh grated coconut! Only caramelised desiccated coconut, aka kerisik! You want your rendang to spoil fast you put your grated coconut, otherwise, no.
