I've started making small batch hop water when trying new hops. I like 2g-4g hops depending on variety, 30g sugar and 4.5pH in 1ltr water. Carbacap in a soda bottle at 20psi. Coke/Sprite etc is ~100g sugar/ltr for reference. Very important to steep at 170 or below. Isoalpha just tastes like bitter and there's no malt or alcohol to balance it. I find a double wall french press does a great job of steeping and filtering that volume, especially when using whole leaf. Willamette was my last batch and Styrian Golding before that. So many hops! Will definitely put Mt Hood on the list now. Cheers!

Tried this the other day, 6oz of independence. It's incredibly bitter. Seems from the comments that I should have better filtering of hops, letting them steep at a lower temp, and cool immediately after 20 mins of steeping? Love seeing your videos evolve. Keep up the good work!

doesn't high carbonation lower PH anyway? I don't know if dropping it to target PH before carbonating is wise
@michaelbiljon82492 жыл бұрын
Agreed. Just carbonating the water will drop the pH from about 7.5 to 5 anyway.

Is the bottling wand necessary? Could you not just fill from the spout since you aren't worried about oxygen/alcohol interaction?
@anthonys4393 жыл бұрын
You're right it's not necessary, it'd be more about convenience since the wand is self sealing and if you fill to the top you're guaranteed that you'll have the same amount in each bottle.

Wait, in the written recipe the ratio is 2 grams per gallon of water ... but if you're brewing 4 oz of hops in 10 gallons, that's 11.3 grams per gallon! That could explain why my 5 gallon batch tastes so weak ...

I just listened to the Brülosophy Livecast and heard you guys talking about adding DME and yeast to naturally carb the hop water. Are you just adding the yeast to the keg? Any specific yeasts that have been successful? Does the amount of yeast used matter? I was planning a 5 gallon batch and adding 10oz of DME to the boil and 34/70 to a keg under pressure and then serve from the same keg with a floating dip tube.

Great stuff mate, just wondering why you used the Brazilian National Anthem on the intro. Hahahe, cheers from New Zealand.

I wouldn't worry too much about the water's pH-level as there is going to be carbonic acid present in the final product. Lemon Juice is a really nice addition as a flavourant and acid donor, but i preferably wouldn't boil it, beacuse boiling lemon kind of dulls the flavor and aroma (68 °C/ 154 °F for 25 minutes will do for the pasteurization of the lemon and also give you less bitterness from the hops). My hop suggestion: if you have some nice 2020 Galaxy hops left, i'd go for that.
@ClawhammerSupply3 жыл бұрын
I measured pre-boil pH and pH after packaging and conditioning. pH was actually HIGHER after packaging and conditioning. So we 100% recommend dropping pH at some point before bottling or kegging.

If use the yeast and the sugar you will get water with some alcohol. I think better to go first way with keg and force carbonation. Or better to drink some beer.
@georgehart11223 жыл бұрын
What is the pH of the hop water post force carbination? I have heard that some C02 can split and make carbonic acid, lowering the pH of the final kegged product.
@kent7143 жыл бұрын
I make hop water without adjusting pH. The finished pH is about 4.5 so I don't think adjusting the pH is necessary.
@ClawhammerSupply3 жыл бұрын
Our pH actually rose by .2 after carbonation. We tested bottles and keg.
@kent7143 жыл бұрын
@@ClawhammerSupply That is interesting. Maybe that is some sort of interaction with the lactic acid and the carbonic acid. Since the keg pH increased I would assume the pH increase in the bottle wasn't due to microorganisms consuming organic acids. I wonder if there is a noticeable difference in flavor with the lactic acid vs the carbonic acid.

You can distill the alchohol off of any regular beer... whatever is left behind is basically non - alcoholic beer... which actually contains a lot of good nutrients, and other things. For instance if you ferment wormwood like wine and don't distill it, the alkaloid stays in it, and is altered by the fermentation process to become a mellow, psychoactive, and medicinal drink, as opposed to maceration, which doesn't chemically alter the wormwood, or distillation, which, like I said, omits valuable nutrition from the final product. Also, yeast makes ethanol which is a disinfectant, and I find that citric acid not only helps this, but also tastes great, even if you use a little too much by accident or something.
