For the second episode of our new series „Cook It Like A German“ DW Food chef Felicitas Then invited DW’s „Meet The Germans“ presenter Rachel Stewart from the UK, into her kitchen to try to teach her how to cook an absolute classic of German cuisine: cabbage rolls!
Recipe for Kohlrouladen (German Cabbage Rolls)
Ingredients (for 4 people, preparation time approx. 1 hour)
1 Savoy cabbage
Salt
1 onion
1 tbsp. butter
1 bread roll
200 ml of milk
500 g minced meat
2 tsp hot mustard
½ teaspoon marjoram
Chili powder
Nutmeg, freshly grated
Black pepper, freshly ground
Kitchen twine
2 tbsp. clarified butter
100 g diced, streaky bacon
2 tbsp. tomato paste
300 ml meat broth
200 ml of cream
800 g waxy potatoes
2 tbsp. flat-leaf parsley, finely chopped
1 tbsp. cornstarch
4 tbsp. Water
Preparation
1. Firstly, you’ll need to peel off eight large, attractive cabbage leaves, and blanch them in salt water. Rinse them off in iced water, and pat dry with a kitchen towel. Finely dice an onion and sauté it in 1 tablespoon butter until translucent.
2. Soak the bread roll in the milk. Now season the minced meat with the mustard, marjoram, chili and nutmeg, salt, and pepper. Strain the milk from the bread roll and mix in with the cooled onions and egg.
3. Now spread a cabbage leaf out on a work surface and place a small mound of mince in its center. Fold in the sides of the cabbage leaf and roll the whole thing up, then secure it with the kitchen twine.
4. Now add the clarified butter to a pan and turn the cabbage rolls in it until they are fried all over, then place them into an oven dish. Next, put the bacon in the pan and fry it for another 5 minutes, then add the tomato paste. Cover it all with the stock and cream, allow it to boil down briefly, then thicken with cornstarch dissolved in water, and season with salt and pepper to taste.
5. Pour the sauce into the baking dish with the cabbage rolls and let it all simmer in a hot oven for about 30 minutes. You can serve Kohlrouladen with boiled potatoes and a sprinkling of parsley.

@@27ankish Clarified Butter would be "Butterschmalz" and is widely available in German Supermarkets. Especially in the winter you could find it in big quantities, as it is used in many traditional Christmas cookies.

Well done, Rachel. My German mama started me off in the kitchen at an early age. My first job was to 'stir' whatever was in the pot. Turns out it was a roux for creamed spinach. You and Chef Felicitas should do more recipes together.

I make Kohlrouladen sometimes, but it’s been a while! I make a lot of German food, mostly using my grandmother’s recipes.

Kohlrouladen, Schweineschnitzel, Kartoffelsalat, Frikadellen, Käsespätzle, and Rotkohl. I’ve made some other German foods, but those are the ones I’ve made multiple times. I also buy imports, like Lebkuchen, Stollen, Knoppers, Bratwurst, Sauerkraut, mustard, and Bier! Hefe-Weizen is my favorite!

I am from Transylvania and cabbage rolls are a traditional dish ..but we are doing different..first is that the meat is mixed with onion galic and rice!!!...and spices coriander a must ..

Cabbage rolls with Wirsching cabbage is just much tastier than with "normal" white cabbage. It is also very good to use "pointed cabbage", which has a finer taste; however, the rolls will be somewhat smaller, but you can eat several. Some tips for preparation and processing: if you cut out the stalk of the cabbage generously and deeply, dip the whole head in the hot water and check in between with a skewer how soft it is, take it out and then the leaves can be removed very easily in whole. Then put them into the ice water. Fry the bacon with the onions and add it to the minced meat. The filling will be even tastier. You don't need to tie the rolls either, if you use either two leaves, wrapped in opposite directions, or you fry the rolls on the cut side first. Have fun trying out the tips.

What a lovely video, thank you! As with all recipes, my family’s is a bit different-more tomato in the gravy, no cream. I really like the idea of searing the cabbage before putting things together for the oven.. will definitely add this to my method. I’m a bit surprised there’s no dill in this version, but no judgment here 🙂 And, as always, the thing that brings us all together: cabbage rolls go with potatoes 🙂🙂💟💟

I don’t recall anyone eating very much meat in Germany between 1960s and 1970s so this is new. Wurst was really the only meat people ate and there was more attention paid to making vegetables very yummy back then. Any meat was as fresh meat served in small quantities and went a long way. Lentils and Schpazle sorry about spelling, was more common as were soups. The cheese selections however were excellent. Bread and ham were common as were fish.

It's a basic but delicious continental meal, sometimes it's nice to go back to ones roots! Except for mixing the meet with dairy I would skip that.

The cabbage head should first be blanched in boiling water, then the stalk can be cut out. This makes it easier to remove the leaves.

Where the meatballs wrapped up in cabbage? There are numerous varieties of cabbage rolls! In othe countries, they use vine leaves instead of cabbage!

Is it really really REALLY a german dish? Cuz Turkish people and other middle eastern people close to Turkey has Dolma and Sarma for centuries maybe a millennium and this dish really really resembles them.. No offense, I am really just genuinely curious whether germans had it for a long time traditionally or not.

the middle eastern version is different to cook and prepare, its withe rice and mince and some spices or herbs, and cooked on stovetop on its own, not with sauce. so yeah they r different

I was born and raised in Canada of German parents. We have a lot of English folks around and they are pleasant enough but I have always wondered about something. Why is it, when they meet a German, they want mention, in one way or another, WW2? I am not sure it’s alway an attempt to be rude but sometimes it feels that way. So a word of advice to Rachel, most Germans you will meet were not alive in the 40’s. If you do meet someone, they were likely children. A cooking show... you might have left that one comment out... it was cringe worthy. Oh, you can find coriander in Germany. It’s one of the main spices in Landjager sausage.

My parents were both children during the war. My mother’s family fled for their lives from the Russians and spent weeks in box cars. Her father spent seven years in a forced labour camp. Mother never got over the rape and murder that she witnessed. My father was a child soldier and spent three years as a DEF surviving on starvation rations. He was skin and bones. He spent the rest of his life trying to drink away his undiagnosed PTSD. Growing up in Canada, all most English speakers know about Germans and the war is what they saw in war movies and pop history. You can imagine, it’s some what tiresome and the people who bring it up are more than tiresome.

Germans talk about the war all the time and it definitely is not a taboo topic to mention. so what's the problem of rachel answering a question? 'don't mention the war' is a skit, it's not a real thing in germany
