Looks like you guys were having fun. I am a hobby wine maker, this year I got 100 lbs of petite sirah and the BRIX was 21 and pH 3.20, does it means that the grapes were not full ripe ? Thank you.

For your fruit, the numbers are only part of the story on ripeness, which is also somewhat subjective itself - different winemakers pick the same vineyard at different times, based off wine style, preference, and experience. So unfortunately the judgement of proper ripeness on your fruit is really down to your preference and experience. Good luck with the wine!
