That's really cool and in my neck of the woods. :) Wish I had tried some before I quit drinking but it probably didn't exist back then. Cactus aren't a scourge really. They are beautiful and prickly pears are really good for you. Juicing them is easy and everyone should drink the fresh prickly pear juice. - Heidi

Great.. and congratulations. I've tried making jelly with the pears.. but, that's it. I live way too far from TX to make it a habit. But, did you say it took about 4 months to make the "beer" before distilling? My beers are about 3-7 days (usually) in the fermenter. And you say ABV is in the teens? That must be some yeast you are using.. :) Way to go.. Find a job you really LOVE.

Thanks. Yes it takes months to ferment. The majority of fermentation takes only a few weeks - after that settling is required. I have a special yeast custom made for high ABV - I have got 18% before.
