I "discovered" dirty rice as a Bojangle's employee in 1984. Amazing. Zatarain's has a box, and it's purty good. I watched Justin Wilson as a young 'un and loved his accent and patois, but I wanted to make that food. I haven't been to Louisiana, but it does look like a grand road trip excursion. Mr. Rollins, you always impress me with your humility, humor and skill, and your emphasis on fellowship. Food can help make that happen, and your willingness to testify and give thanks to God for the good things gains big-time respect from me. It genuinely warms my heart. Thank you for what you do and all you've done. I'll definitely print this recipe and make it sometime in the future. I work for a major retail lumber company that encourages a family approach to business and employee support, and a little dirty rice for my coworkers would be a nice treat. Chorizo rules. Andouille sausage would've been a nice addition, though lol Keep doing what you do, and thank you.

Cowboy Kent, you sir are the Mr. Rodgers of cooking. I enjoyed the sure joy of how happy he was to make others happy and you sir are no different. Watching your videos has been truly inspirational to me and just love the fact I happened to stumble across you about 6 months ago. I truly love the fact of what you cook is the types of good ole fashioned food I grew up on between Momma and Grandma's cooking. By the way I watched Sir Justin Wilson when I was a kid. He's the best. Kent every show you support all our veterans and first responders and I appreciate that, I really do. Had to laugh when this reminded me of my old daddy when he came to live with us. I had made some dirty rice a few times without the liver and gizzards and he loved it. But for Christmas I decided to go old school... he ate it, but told my wife later that he didn't want to hurt my feelings, but he hated liver and gizzards in dirty rice.... Lesson learned. I miss the old man who was always my hero growing up. Thanks Ken and Shan and the pups for a great video. Oh and BTW Justin Wilson lived in the same parish as my mom did growing up, most of my kinfolks knew him personally.

Justin was "required" viewing Saturday morning when I was stationed in Louisiana in the early to mid 80s. JustinWilson spoke at the St Patrick’s banquet in Shamrock, probably back in the late 60’s. My Daddy loved it, every time he would try to tell one of his jokes he would get so tickled and crying he couldn’t even tell the joke!!! A special memory of my Daddy!!! When I was 10 years old my Mom worked in a store in Denham Springs where Mr. Wilson shopped. I was walking down one of the aisles one day after school and there he stood, reading the label on one of the products and muttering to himself in that Cajun accent. "How Y'all Are?" ran through my head, but I didn't have the nerve to say it. I have "The Justin Wilson Cookbook" and dirty rice is one of my favorites. This gentleman is truly one of a kind. Every single day you tune in he just makes you feel like everything is going to be alright. He is such a reassuring presence. On a side note, my aunt (in-law) was 100% cajun and she refused to ever eat liver, gizzards or hearts. So it’s not always for everyone.

Just got out of the hospital so I've been catching up on my videos during this self-isolation period. I tell ya what, you just made my day with this video! I was half in tears with the memories, but smiling as well! I remember a few weeks ago you responded to one of my comments saying how much you missed Justin, as do I, so I figured you'd do something eventually with one of his recipes. Oh I don't feel DIRTY at all about that cowboy twist! Not a big fan of the gizzards and whatnot myself. And Justin Wilson was a legand, his accent was just pure smooth southern charm. Thanks for showcasing him for us here as well cowboy!

Wilson was born in Roseland near Amite, in Tangipahoa Parish, in southeastern Louisiana.

@@jackwyatt1218 he was known for his humor and storytelling, I'm sure he was putting it on a bit for the cameras. No way to really know if it was a fake accent though! I mean I was born in North Carolina, but I spent a fair bit of time growing up in South Africa at which point I did have a South African accent!

There were times that all I had in the house was rice, spices, "Holy Trinity", and "el cheapo" ground meat. Dirty rice was literally a lifesaver. Hated it when I 1st had it. But when you ain't got much, you deal with what you got. Now, my wife'll tell you, I can't do any cajun meal without dirty rice (I leave out the livers as well. That's catfish bait). Got my wife hooked on dirty rice and mud bugs. But she still won't eat gizzards or andouille sausage.

I’m almost 66 yrs old. My mother was Justin’s secretary and booking secretary in the 50’s. I met him when I was about 5-6, he scared me half to death speaking in Cajun. Justin was not born Cajun, but he mastered speaking Cajun and did quite well with it...

Kent, just made this recipe today and taste tested it. Holy mackerel, that was phenomenal!!! We are getting ready to sit down as a family and eat it together. I make a great dirty rice. But I still watched this video twice now. I remember watching Justin Wilson when I was kid. My friends asked me why I watched cooking shows. Now my friends come by asking what I'm cooking. Love all of your videos !! Thanks for the recipes and memories.
