Hi Paul , love your tutorials . the step by step instructions are very clear and really easy to follow .. I made my 1st cake a couple of months ago which was your round bow cake for my daughters 18th Birthday which turned out great . I have now got the baking and decorating bug and since gone on to make a sculptured car , hand made fondant roses and just made a doll cake which I`m very proud of ... thanks again for your tutorials . looking forward to seeing more in the near future ..

Hi Paul, fab tutorial and will definitely be trying out something similar to this. I was just wondering, if you were to use a vanilla sponge (or in fact anything other than chocolate), what would you use instead of chocolate ganache? Would you use butter icing? Thank you!

hi Funsize K, if using vanilla or a lighter sponge Paul would use white chocolate ganche (watch as it has a lower melting temperature than dark ganache). He rarely uses butter icing as structurally makes it difficult with certain designs especially when its warm. Lot more on this and other cake decorating help free on our website designer-cakes :-)

Hi Clemsonshawty, its always best to approach a local supplier for your cakes as prices and sizes can vary hugely. Feel free to point them to this cake and so long as its not copied to to the exact detail (which most designers wouldn't do anyway as you want it more personal) then we have no problem at all with the copyright stuff. Recipes will differ but we usually make the cake no longer than a week before the event. Once the cake's decorated best left in a coll, dry place, but not in the fridge as this will cause the fondant to sweat. Hope this helps. Px

Conswailla Cunningham Hi Conswailla, thank you for getting in touch and for the great feedback. I am glad you enjoyed it. You can use whatever brand of sugarpaste you like. Sugarpaste and fondant are the exact same. I think Fondant is more regularly used term in USA. Paul tends to use Renshaws sugarpaste however:-) I hope this helps! x

cake should be frozen once cool from the oven. Freeze for 1-6 months and ensure that its defrosted sufficiently to allow your knife to glide through to carve.

hi Sindy, the best way is to freeze the cake overnight then take out the freezer 3 or 4 hours before you plan to start carving.
