Isomalt is a sugar substitute that doesn’t crystalize, has high resistance to humidity and sets crystal clear. In the US, I see it in craft stores like JoAnne’s Fabrics and Micheal’s Crafts, near where the Wilton cake decorating area is.

Awesome ideal, have seen this as well using Jolly ranchers. However, royal icing would be 100 times more tasty to eat than fondant. Chocolate clay is yummy...Gorgeous cookie love the candy in the middle that is new...Love this ideal thank you!

Yes you can eat them. It's basically a sugar cookie with a lollypop in the middle.
