Very fun recipe! I love the use of creative techniques and shapes in desserts. Would be very fun to have a hot (temperature-wise) sauce that pours over it and reveals the cake while melting the sugar. Anyway, amazing recipe as per usual!

I am so happy that I am not alone in just needing to know I can DO these amazing things... Sometimes I see stuff and have no option but create my own way from scratch- example; first time I saw mirror glaze on a cake... Had NO IDEA what it was but was entranced so laboriously invented my own version which actually wasn't that far from the now readily available recipe! Also- edible lace. Never bought a pack in my life. Make my own. Experimentation rocks. Been doing it for decades. Impressive little box. I failed miserably with isomalt but I can feel its time to have another go.. Am already subscribed; keep em comin! And thanks :-)

Ive done a melted sugar topping where you melt on stovetop then stream fine filaments from a whisk onto a large buttered surface makes a caramel sugar webbing, but I don't know what isomalt sugar is? Ive also made stained glass for gingerbread windows and lollipops I just use white sugar, what's the difference?

I noticed the way you removed the parchment from the bottom of the inverted cake, and I thought you might appreciate this tip: remove the parchment by pulling it back across itself 180 degrees, such that it scrubs lightly against itself as you gently pull, rather than upward from the surface, because pulling upward is the most effective way to tear the surface off the cake. It happens more often on very tender crumb cakes and those whose sugar profiles don't result in a firm surface, but I've had it happen on denser cakes before I learned this technique. This also works for just about any film clinging to any given thing. Pulling up gives the occlusion force maximum efficiency in transferring that force to the widest possible area surrounding the edge of separation; pulling straight back across itself absolutely minimizes the area of that force to a very thin line, making it much easier for the film to separate cleanly. I hope this helps.
