On the cake website they sell an XL battery that has a 70ah capacity and other testers have gotten the bike over 62mph. I think the utility and practicality will make it sell to those that want to have fun and get stuff done.

Keep in mind that this one is built like a tank I tested it today and holy shit its well made. I bet this one is built much better than the bike you compared it to, it's made to last. Also it doesn't really need the range or speed since its made for urban travel and hauling within a city.

No. More power gives you speed, more voltage gives you more speed only if the current doesn't drop too much. Voltage and current multiplied is power, so all relevant factors are built in. Higher voltage makes less need for heavy, thick cables, though. Same thing with Ah. The range depends on the energy that's in the battery, and energy is measured in Ws (same as Joule). 3600 Ws=1 Wh. More Ah gives you more range of the voltage is the same, but Wh are directly related to range. If you know the energy (Wh), you don't need voltage or Ah for range calculations.
