Hi and welcome back to my kitchen. If your new to creating tiered cakes in this weeks cake decorating video tutorial I am going to be showing you how I prepare, dowel and stack my cakes.
I will be stacking a 5, 7 & 9 inch fondant covered cake and going through how to choose the correct dowels, how many you need and where you need to place them in your cakes to build a solid structure.

I remember when I was stacking cakes for the first time before starting my business and how nerve wracking it was. Now it feels totally different. We all start from somewhere and get better with practice ;)

some very good tips on how to use dowels. I'm making my first tiered cake and its a wedding cake for my daughter. it will be travelling up to Scotland in 3 separate cake boxes and it will be put together on the day

I find that a coarse emery board is great for evening up the ends of the dowel. As I often do my nails, it's a very natural process for me. 😁

Hi Lynz, absolutely love your videos, you explain everything in detail and make it easy for us to comprehend. May I ask if you use a glue between the ganache and fondant, eg brushing the ganache with water or sugar syrup? (Always seems such a shame to have huge holes in a lovely cake!) Hi Sue, Thank you so much. I'm so glad you enjoy them. If I'm finding that my fondant isn't sticking to my ganache I usually mix a little water with some icing sugar to create a glue and brush this over the cake to help the fondant stick. I find just by adding a little icing sugar to the water it makes it a little stickier than just water on its own. x x

I've found your video really helpful as next year i'm making a wedding cake for a friend. I was wondering if you could answer some questions for me? The cake will be a 3 tier using fondant, would I need to crumb coat or is it OK to use apricot jam then fondant? Also if I'm going to sandwich the cakes with different flavoured buttercream, would it be wise to use a centre dowel? Many thanks

Hi Lyn. great video. So can you confirm that you did not use any centre dowels? I have 11 inch and 8 inch cake to stack, and it will be cover with a hybrid buttercream. Do you think i need to add a centre dowels for these cakes to stack? Thanks

How tall are your cakes? They look amazing!! How do you get them to bake evenly? I’ve been trying but the outer layer burns before the center cooks even when I use a core

Cake straps it’s a fabric strap that wraps around your pan and make it cool evenly

Your oven is absolutely too hot. Use a lower temperature and bake for a longer period. Your oven racks might also need adjusting. The cakes should be in the center of the oven.

Hey... you videos are so helpful and explanations are perfect ☺👍❤.. need a small help when stacking a tier cake if the bottom and middle tiers are dummies and the top is cake. How to insert the dowel to the top tier without to be seen if no decoration on the top tier... ☺☺

Hi Dilshani, If its a 3 tier cake and the 2 lower tiers are made from polystyrene dummies you don't need to add any dowels into the top tier. If you wanted to add a dowel into the center if the cake for extra support to go through all 3 tiers you can fix the 2 dummies tiers together and add a dowel straight into the center of these. Add a small hole into the cake board that your top tier is sitting on and then lower this onto the dowel. Make the dowel slightly shorter than the cake and it won't poke out the top. I really hope this helps and makes sense.

Thank you this was a very helpful video.. I just have fine question after I cover cake in fondant and leave it to set do I cover fondant and do I leave it in the fridge or out .... Im trying to figure out best choice So my fondant doesn't sweat ..

Hi Maria, I am so glad you found it helpful. When I have covered my cakes in fondant I always then leave them in a cool dry place, out of the fridge for the fondant to firm up. I find if they go in the fridge once they come out with the change in temperature they begin to sweat which isn't great if you need to stack or decorate them. I hope this helps.

@@CakesbyLynz yes it does ...that was my problem I thought by putting them in the fridge would be better but started to notice that they would sweat.. Now I will leave them out and add fondant a day before so it has time to firm up ... Thank you so much ... Where do you think I should leave cake .. I work from home ...

I usually leave my cakes in the kitchen away from a window. If I have more baking to do I will move them into a room that is the coolest and people won't be going into.

Thanks a million for this tutorial! You saved me. I had a few situations where the cakes collapsed and I could not understand why. Very embarrassing moment. Since I watched your tutorial and followed your advice, my cakes have been ok. I also purchased some sturdy plastic stacking cake plates for peace of mind. Thanks again!

Hi Helen, Depending on the design I have taken 3 tiered cakes to venues before already stacked if they have alot of decoration or things like sashes that go over all the layers, but if I can I always try and transport them smaller and stack at the venue, even if I have the 2 bottom tiers stacked and I add the top tier at the venue. For 4 tiers or more I have always transport these smaller and stacked at the venue. Always think about how far you have to travel and also the roads to get there, what will be best for the cakes. In the UK alot of wedding venues are down small country lanes which seem to have so many bumps, so it can be best to take them separate.
