I remember when I was stacking cakes for the first time before starting my business and how nerve wracking it was. Now it feels totally different. We all start from somewhere and get better with practice ;)

I find that a coarse emery board is great for evening up the ends of the dowel. As I often do my nails, it's a very natural process for me. 😁

Hi Lynz, absolutely love your videos, you explain everything in detail and make it easy for us to comprehend. May I ask if you use a glue between the ganache and fondant, eg brushing the ganache with water or sugar syrup? (Always seems such a shame to have huge holes in a lovely cake!) Hi Sue, Thank you so much. I'm so glad you enjoy them. If I'm finding that my fondant isn't sticking to my ganache I usually mix a little water with some icing sugar to create a glue and brush this over the cake to help the fondant stick. I find just by adding a little icing sugar to the water it makes it a little stickier than just water on its own. x x

Cake straps it’s a fabric strap that wraps around your pan and make it cool evenly

Your oven is absolutely too hot. Use a lower temperature and bake for a longer period. Your oven racks might also need adjusting. The cakes should be in the center of the oven.

I've found your video really helpful as next year i'm making a wedding cake for a friend. I was wondering if you could answer some questions for me? The cake will be a 3 tier using fondant, would I need to crumb coat or is it OK to use apricot jam then fondant? When you put the cakes in the fridge to firm up and then put the fondant , doesn’t the fondant starts to melt? How do you manage condensation ?

The freezer does not cause condensation or sweating, it is the change in temperature that does when the cake is moved from the freezer to room temp. To prevent sweating and condensation from occurring, move your cake to the fridge from the freezer for about an hour before serving to let it adjust to room temperature! Wrapping the fondant cake in a box also helps prevent this!

Hi Amy, my advice would be to use a nice strong dowel. Fruit cakes are actually quite sturdy so even though they are heavy they are usually better at keeping their shape and have less movement than a softer sponge cake. I have stacked fruit cakes on top of sponge cakes in the past, so as long as you have a good structure inside the cake to take the weight and use a dowel that when pushed with a lot of weight won't bend it should be fine. I love the wider, thick dowels polydowles I use in the video for larger, heavier cakes.

Hi Helen, Depending on the design I have taken 3 tiered cakes to venues before already stacked if they have alot of decoration or things like sashes that go over all the layers, but if I can I always try and transport them smaller and stack at the venue, even if I have the 2 bottom tiers stacked and I add the top tier at the venue. For 4 tiers or more I have always transport these smaller and stacked at the venue. Always think about how far you have to travel and also the roads to get there, what will be best for the cakes. In the UK alot of wedding venues are down small country lanes which seem to have so many bumps, so it can be best to take them separate.

Hi Dilshani, If its a 3 tier cake and the 2 lower tiers are made from polystyrene dummies you don't need to add any dowels into the top tier. If you wanted to add a dowel into the center if the cake for extra support to go through all 3 tiers you can fix the 2 dummies tiers together and add a dowel straight into the center of these. Add a small hole into the cake board that your top tier is sitting on and then lower this onto the dowel. Make the dowel slightly shorter than the cake and it won't poke out the top. I really hope this helps and makes sense.

Hi Maria, I am so glad you found it helpful. When I have covered my cakes in fondant I always then leave them in a cool dry place, out of the fridge for the fondant to firm up. I find if they go in the fridge once they come out with the change in temperature they begin to sweat which isn't great if you need to stack or decorate them. I hope this helps.

I usually leave my cakes in the kitchen away from a window. If I have more baking to do I will move them into a room that is the coolest and people won't be going into.
