The point is showing the slow melting of the chocolate is so you dont burn it or have it seize when melting in the mixrowave. Both are very easy to do, then it has to be thrown out. Thanks for the info on food grade bubble wrap, I didnt know it existed.

The point to emphasizing the melting and stirring of the chocolate is to be sure the chocolate is not over heated or burned by melting it all at once. Stopping and stirring is critical to the efficacy of the chocolate. Am I the only one that got that?

It look like compound chocolate that does not need tempering just melted to 40 degrees ,not couverture , tempering couverture is just a little more complex than just melting and spreading.

Excellent idea. Do you use a special bubble wrap? I am just worried about the potential (even if unlikely) health issues, since the hot liquid (the hot chocolate) is in contact with a type of plastic which as far as i know is not suitable for food-contact, and non treated plastic is known to release some toxic substances with heat.

I'm amazed how easily the bubble wrap came out so easily. You made it look so simple & easy. I have to try this. Hope this works for me! Did you advise I spray the bubble wrap or give it a try without spray ... I'm nervous...don't want to waste that chocolate ;o) Truly amazing design and FINALLY a proper use of bubble warp :D Not to sound rude but I've seen a lot of your amazing videos but the choice of music doesn't synchronize with what your doing. Clicking the little cog icon at the bottom right of the video opens a menu to set it to play at double speed. Several speed choices are available. You can even slow it down to .25 speed if needed.

Jo Delafuente I think she uses 'pastry chocolate' which I assume is the equivalent of 'baking chocolate / compound chocolate' so that it has vegetable fat in it rather than cocoa butter so that it doesn't have to be tempered to go hard. Jo Delafuente tempering chocolate is tricky when you're starting out. I had a hard time with it for a long while until i finally caved and got a digital thermometer. it made a world of difference and now i can pretty much eyeball it. definitely watch the "how to cook that" tempering videos, or use compound chocolate and never have to worry about tempering again :)
