Duck fat is very traditional for fries and any natural fat is healthy what’s not healthy is the seed oils like canola and the recipe sounds delicious

Thank you for the tip on removing the pit from an avocado. I always used to knock it in my hand, but I enjoy having fingers and your visual pretty much put the fear of God into me, so from now on, I'm a reformed man. On the counter it goes. Around here, that's a San Diego style burrito. Those guys are nutty down there with their crazy French fries in the burritos and that zaniness, but they're also not wrong.

When I first heard of a CA burrito, I too thought it was weird. Then I watched a Cooking Con Claudia video where she made it and it finally clicked on why it works. Nice work guys!

Here in Arizona, on the border with Mexico we call flap meat, arrechera, and it's the preferred cut for carne asadas. Keep cooking. Peace...

That cut in AZ if called Arrachera very popular for Carne Asada Another cut used often for Carne Asada is thin Chuck Steaks called Desmillo...

If you wanted to be really conservative I think take a chuck roast, that are on sale here all the time for 3.97, and send it through the grinder with a 1/2" die might even work. Looks great.

I just saw your "short" on cheesesteak steak fries. Might I suggest Carne Asada Fries? Everything you put in the burrito, plus cheese. Cheddar and Cotija for me. I like Mexican Crema better than Sour Cream. It spreads more even than sour cream. Just my .02c Keep up the good work!!!

I bought the same thing at my Costco here in East Los Angeles two days ago, which was $11.99 per pound. Thank God "47" is going to try to change that! By the way, have you tried using Marco Pierre White's method of using "Knoor Beef Bullion" and olive oil to marinate your steaks? I suggest you do if you still need to! I grew up eating carne asada every weekend, and I know what excellent carne asada is... it was precisely that. But I am going to try yours too.
