Audrey Long Africans throughout the world, wherever we are, are having challenges with high blood pressure; that includes the ones at home. I find we use too much salt universally. The African Caribbeans also over salt terribly. We need to learn to use more herbs and spices and MUCH less salt and eliminate table salt (sodium chloride). Let the flavors of the foods come through. Be kind to your heart and kidneys and blood vessels. 😘

Sad to see so many haters in the comments! There's more than one way to make jollof XD I actually prefer this method, its more flavorful and the rice is less likely to overcook. Its YOUR food, cook it the way YOU want! Jollof is delicious no matter where it comes from or what method you prefer, its an amazing African food that we should be proud to share instead of being negative just because she cooked it a way that you aren't familiar with. I made your jollof rice with kingfish and prawns yesterday for dinner, it was a great success. Everyone has had a least two helpings and there's still enough left for today's meals. This looks so good! I can see how versatile this recipe is. I can use shrimp instead of beef. I can use chicken in place of beef too. If I wanted it vegetarian I can leave the meat out altogether. i made it , i followed the insttruction, only had a little trouble when you said blend the spice, i wasnt too sure what exactly was to blend and what wasnt. anyway except for the chive, (green onion,) everything went really well , my children love it , have to make it again fro my husband and try other countries jollof. thank you , it was the bomb.

I love the act of making a paste of your fresh spices - I think I'm going to start doing that immediately with everything I cook. I think I'll cook my vegetables for about 5 minutes though so that they are not raw tasting and maybe use a bit less oil but other than that, this looks really good.
