So was craving Nigerian rice yesterday then suddenly I stumbled on this video. Watched jerky paying attention to all the steps. I even used the measurements she put up cause I was bent on having the perfect rice. When I tell you I didn’t everything and my rice came out perfect! Grainy,perfect color, taste. It’s the best I have ever cooked. Realised some of my mistakes previously was not using the right rice, rice to tomato ratio, opening the pot too often while cooking so wasn’t trapping enough steam and using a lot of water. I’m it even Nigerian but always ordered this delicacy from a local Nigerian restaurant. Now I hacked the code they are never seeing my coins 😂😂. @@Makaina2 which has nothing to do with what I said. But yes, we agree. However, Jollof in its initial incarnation is from the Ivory Coast or Senegal. Often debated which comes first. But not Nigerian. Literally named after the Jolof Empire, Which now encompasses the French speaking part of West Africa.

Roasting the veggies beforehand was such a game-changer. I make mine this way and the results are wonderful. I normally use African chicken because I like the broth, but the chicken can be a bit hard. I'll try with regular chicken the next time. I love cookware and quality tools like Staub, Vitamix or even the rice washing bowl make cooking so enjoyable. Thanks for sharing this recipe and Happy Holidays!

Hey, I'm working as a chef, and we cook food from all over the world,we have jollof rice in the menu as well,but we need to cook it in the oven in big trays, because we cook 20 kg of rice, what temperature do you think it should be cook and for how long? (We put the rice,the sauce,water,in the trays,cover with paper and aluminium foil and bake it).Till now we cook twice,but we still need to learn more to make it perfect , thank you for your recipe 😊
