Your meals never fail to impress!! I used to be a little too elaborate cooking my fish until my chef brother suggested to simply gut the fish...nothing else. Place fish on hot coals...no flame...10 to 15 mins either side, depending on the size. Take off, peel back the charred scales (it'll look really black and burnt), add a bit of salt, lemon or whatever then eat. As far as I'm concerned it is easily the simplest and tastiest way to eat fish...but only use this method using fish with large scales. Never done it with small scaled fish such as trevally, yellowtail or queenies (pretty ordinary fish to eat anyway!!)

The seviche and fish taco looked great. I think the kiwi would add a nice acid to the taco. Never tried it with the skin on tho. Try mango, avocado and red onion diced up and add a little balsamic vinegar. So good and easy to make. The underwater shots were nice. Never saw a fly like the one that was flying around your campsite. Quite a monster! Very relaxing video. Take care.

The doctor here. Great video Scotty. A word about Luderick. THey need to be kept alive until gutting. The key is to scrape and bleed the backbone after gutting before it can put iodine into their system and spoil the fish. Great recipe.

Kiwi here are dark brown and kinda fuzzy. But taste good. You eat far better in the bush than I do at home....lol. wish I could find muesli here...that looks so good. I saw you wash up with that bush long ago when I first watched you by the river.

My favourite take on ceviche is a Fijian dish called Kokoda. It has a balance of lemon and lime juice, chilli, tomato, coriander and coconut milk. Add it to rice or white sweet potato and splash with soya sauce to your liking.

Pacific islands have a very similar dish, variously called Kokoda, Otto Ika, Ika Mata etc. depending where you are. Same basic ingredients as your ceviche but with coconut milk added. And it is sensational !

An amazing video as always. You are by far my favourite Toutube channel. I'd really love to know how you go about supplying yourself with enough water for these trips. I find locations so limiting, especially in summer, due to water. Do you actually carry in enough water for a full weekend in summer? That's brutal. If not, I'd love to know all your techniques for sourcing it, especially for locations where you've never been before.
