Camp Cooking Tuesday, South Carolina Pimento Cheese and Egg Sandwich

This week we tackle breakfast at camp. I came up with this idea a couple of weeks ago rummaging through my fridge for a quick breakfast.
Ingredients:
Bread
Butter
Egg
Pimento Cheese (Of course I suggest a good ole South Carolina Pimento Cheese.)

Bear.. I make a pimento cheese spread every Christmas that would be really good that way. I use a 8 oz brick of Vermont Extra Sharp White Cheddar Cheese. Grade the block in a bowl. Now add 1/4 cup diced pimento pieces. Next is a cup of Mayonnaise. This is the fun part , dice up 18 to 20 Spanish Olives with the pimentos in them ( cocktail olives ) add them. Now finally a splash of lemon juice ( 8 to 12 drops ). Genteelly mix well and enjoy.

Nice to see ya Bear, been a minute. My 12 yr old that watched your vids with me through the years just asked me yesterday if you've posted. Told him I knew ya were doing some stuff on FB.
