padding the lamb in dry rub and seasonings overnight, then several hours in the smoker the next day... slow cooked on it's own fats and juices... the meat melts delicious!

I've been an avid viewer of your channel for a few weeks now, and I love it. So I'm now catching up on some of your older videos. I did a little squeel of "Ooooo", when I saw you were cooking an entire lamb over a fire pit!! I'm rather jealous, and wish I was just sat with you in the open air, supping a beer or two, watching it cook.....and the feasting on it. What a scrumptious Easter camp meal! Nice to be able to share with Mark! The traditional grill method was the way to go for sure. The lamb is crisping up nicely. As you say, lots of meat, but why not? Leftovers are always tasty👏🏻😋

The symbolism of the lamb on the cross is impossible to ignore as we approach Good Friday. There’s something beautiful about it, like a sacrament. We take communion; bread(the body)wine(the blood). Why not the Lamb of God?

fabulous! I know that this dish is common in Latin America. Many years ago, I happened to see a similar method of cooking in relation to fish. I was on Lake Baikal. In this lake there is an endemic fish called Omul. This fish was cut along and placed flat wooden sticks, which are called the "рожон ,Rozhon", passed the ridge between the skin. These sticks are pointed on both sides. Fish, fixed in this way, is placed near coals, sticking sticks into the ground. From heat of coal, the fish is fried. So you can cook any fish or meat and other products. From the name of these pointed sticks, the Russian proverb is made "не лезь на рожон": do not run into trouble.

We got caught for three and a half days of rain in the middle of a 10 day canoe trip. It was really miserable having to have a tarp over the fire and constantly having to dry out everything. But the bad trips make the good ones soo much better.

John Guy, Passed now would start the bonfire at 5 am so the lambs would be ready by 2 P.M. for the 25 or 26 carvers needed to serve the hot lamb right off the crosses onto your plate. Each cross gets taken to the serving lines when ready.
