I love videos where Ben gets to flex his chefs brain. This feels like the successor to make it gourmet. Ben takes scraps and makes them gourmet.

PLEASE! Do this as a Pass It On format! The normals all do a pass it on to come up with a dish on their own. Then Kush and Ben come in (maybe some special guest chef? 👀) come in after to do a pass it on of their own with what's left over from the normals! You could call it "Trash It On" And it would be absolute chaos and I'm so here for it!

I like this idea, especially because they have hinted multiple times (and it's rather obvious after having 20+ extra ingredients warm on table) that the left over ingredients are used to make food for the crew. So... pretty much "b roll" of Kush cooking for the crew?

I'm a big fan of the "there are no scraps and leftovers" philosophy, but what Ben is doing here is really impressive. I try to think along with this kind of challenge, but my homecooking mind always tricks me to come up with just one dish for all the scraps. Ben's way of splitting them up makes them at the same time more awesome and simpler. Great way to look at food.
@MissingmyBabbu

I save a lot of scraps in my freezer (shrimp shells, ones for stocks, all manner of veggie and herb scraps) and sometimes it's hard to actually use them up. I'll have a few bags of broccoli/cauliflour scraps, and if I cant think of a way to use the whole lot of it, I often don't use them at all. I've been getting better though. They're great fried off with onions and such for a stew, even something like a chili. I've actually once made an entirely vegetarian chili that way to prove to my dad that veggie dishes are just as tasty. He LOVED the veg chili, and couldn't guess the secret. It was handfuls of all the frozen veggie leftovers, beans, tomatoes, and seasoned tofu crumbs. After a soak in the chili with all the spices and everything, you can't tell it's vegetarian.

Mike looked so gleeful when sharing what he thought were the worst scraps possible, but Ben really turned them into something beautiful looking and tasting. It's really a testament to Mike's cooking that he was able to make a really fancy dish with such little wastage. He did a great job! I did laugh at 13:19 cuz Mike knows us so well, it's not that we don't care about it, it's just exciting to see what the scraps turned into. Also, it's normally Mike who's really hard on himself, but so is Ben. Mike was praising that omelette to high heaven and Ben just went it's fine, the color's too dark for an omelette.🥺 He served up really delicious dishes out of some very difficult scraps. Ben you did so good!

Hold on, there's an idea there! Imagine a battle where each side has a normal and a chef, the normals going first and making the main dish for their team. Then, the chefs go second, using the scraps from the opposite team's normal to make appetizers or other things that pair with their normal's main dish.

Especially with really commonly used things such as the broccoli stalks. I personally always get the long stalky broccoli when I buy it just because I always use the stalks to make soup.

I love this - so much can be done with some scraps, especially if you know how - I often make soups from broccoli and cauliflower stalks (or even brussel sprout stalks, if you can buy them fresh on the stalk). I would not have thought about scallop butter, but I've done similar with shrimp heads and oil for a finishing drizzle. I'd love to see this done in a dessert format too - so many cakes call for just the whites of eggs, for example - watching Ben using the leftover yolks to do curds or other things would be fun.

We always use up the leftover egg from the panée (or panír in my language). We mix in some of the flour until we get a still kind of runny, but somewhat firmed up "dough". Add some salt and scoop tablespoon sized dollops into the hot oil and fry them until they are golden brown. My mother calls them "Clouds" as they float on the oil when frying like donuts and they take all kinds of shapes because of the runny nature of the dough. They are perfect little after work snack for the chef or anyone who wonders into the kitchen but does not allowed to snack on the meat we were originally frying :D

I really love these food scraps challenges!!! I come back to rewatch them (and a bunch of other types of videos you do, but hey. I'm rewatching this one now haha)
