Thankyou! For years and years I've been telling people that raw fish isn't sushi, that it is sashimi, and that it is the vinegar seasoned rice that is sushi!

Thanks Taku for explaining what "sushi" really means. I wish we had rock crab here in NY. You guys are so lucky on the West Coast to have access to Red Rock Crab and Dungeness Crab. I can buy Dungeness crab here but it's not from here. We do have Blue Crab but that too mostly comes from Maryland. I love crab and those California rolls you made had me wishing I was there with you guys lol.

Rock crab is caught in quite limited numbers. You can't get it unless you live in one of a very few coastal cities.

Informative, thank you. I never noticed the texture difference between rock and dung. What I have noticed is the Dung is a little bit sweeter. I like them both.

I put a very very light spring on the door to prevent from opening after the crabs get in. works great if you keep the spring light enough to allow craps to coming and and feast on the bait!

Alright. I'm inspired. I'm making takikomi-gohan in my camper van using shitake mushrooms, crawfish, whole garlic, negi, nasubi, kuri, (Japanese kuri is hard to find this time of year!) as I type this in a 12V rice cooker and I dont know why I am doing this... Tonkatsu pork. Its been decades.

I always enjoy your videos. Living in Oregon, we have caught thousands of Dungeness. My favorite is claw meat, then leg meat and finally body meat.

My mom taught me the knuckle tip when cooking rice. I've taught it to some of my friends and they say it is a game changer. Also you would be surprised at how many people dont know to wash their rice.

I'm all excited, and you were like, buy this package because making sushi rice is hard! Hahaha! I can't cook at all! Every time I make sushi rice it sucks! :'( Anyway, love the content! Your stuff is awesome! Next time I dive out in Monterey Bay or somewhere near there I'll come find you and pick up stuff for you to cook! :)

that was fantastic. Being from Cincinnati, many might think we do not have good sushi restaurants which is not true = we have some excellent ones. In fact, two friends that moved from Cincy to Santa Clara said the best sushi restaurants they've ever been to are still in Cincinnati. One of our best, though, has closed when the Executive Branch of the Toyota NA HQ moved = they brought over a sushi chef and opened a restaurant by their HQ which was by the Cincy/NKY Int'l Airport that was just superb. Anyhow, great video. It's late here, but I really, really wish I could run out and get some crab and sushi right now.

Red rock rocks! Hands down better than dungie. Not easy to pick out rock meat, but worth it for sure! For the rice; the knuckle method works perfect every time, regardless the size hands you have. Eat well. And try everything once. Much love from Chef Rob

You can definitely tell just by the texture of the meat, although the two different rock crab have different taste from each other as well.

Nice job. I've found eating outdoors in windy weather is a real PITA if you want your food to serve warm. Love the explanation about Sushi Rice vs. "Sushi" seafood. I will use the correct terminology with my local Sushi Bar, Miyako. Not so sure the body parts of the crab make the ideal taste however.

I watched all of the video but I didn't see a 'rock' on Jocelyn's finger. You should do one with a blind 'OMG I DO!!!' with a rock on that finger. But seriously I love your videos and she adds a nice touch to them.

"Knife is Life" There was a local Japanese grocery store (Mitsuwa Marketplace) that was relocating and they were having a closing sale with everything 25% off. I remember they had a few knives made in Japan on sale. They were from $60-$120 +25% off. Looking at your video makes me regret not buying a few of them while they were on sale. with that being said, my all time favorite knife has to be my Nakiri, hands down. I wish my taste pallet had the privilege to know the difference between crabs.. lol

Surimi (ground meat) fish is good for people with allergies to crustaceans, just like a “near-beer” (nonalcoholic) is good if you like beer but can’t have alcohol. But it certainly isn’t the same flavor or texture as the real deal. The funny thing is most surimi fake crab is Pollock, which is delicious by itself...why molest it with binders, crab flavor, and red food dye??
