That's because Ramsay knows that a critic is important to your reputation having to fight for all those stars and worse still, an Asian critic. He went to South East Asia once, stepped foot in both Thailand and Malaysia, got trounced by the chefs there. Then he landed in Singapore, issued a challenge with 4 of the best local hawkers to outbeat them and he barely eeked out a draw. Thus with that, he knew how tough the people are with food, especially people from SEA which happens to be Uncle Roger's home territory thus Gordon was slightly flustered.

I suspect he's gone so broadly into the cooking community online is because not so many of his kids got into cooking like he was so whole-heartedly hoping for. Not a dig at him, mind you, but I think this outcome was the very BEST he could have ever had. He's making himself known to younger and younger generations, getting them curious and involved. In a sense, he really has become "Uncle Gordon" to so many. AND, this all shows his true self, that he's not the merciless rage machine you see on American shows like Hell's Kitchen. More people need to watch his old original British Kitchen Nightmares episodes. They're SERIOUSLY worth it, so many times more real than the American one. ♥

He was always fairly chill, it's just the angry persona was good for USA TV. If you look at UK Kitchen Nightmares, he genuinely tries to help businesses - in the USA version he's always screaming "IT'S RAW", "IT'S FROZEN", then the waiting staff are always shit talking the owners, and then the inevitable "We're closing! Shut it down!". It's all just dumb drama for the cameras like all "reality" tv.
