I’m Indonesian…and I must say Uncle Roger knows the real Indonesian ingredients by name such as; kecap manis, egg noodles, and IndoMie which it impresses me. Also, its common to use MSG (vetsin)and shrimp paste (terasi) to get that authentic taste. Lastly, Indonesian are predominantly Muslim so adding bacon (pork) into mie goreng is highly unlikely to be served on the street corner. Uncle Roger is right on the money there!!! Crazy to think Gordon Ramsay watched his videos and found humor in it. I know he's nothing like the Hell's Kitchen show, he's actually really chill but I didn't take him for a person with a sense of humor and self awareness. I absolutely love it. I am Japanese and when local chefs do European cuisine, it’s all about making it as authentic as possible. Only the authentic ones get respect. When western chefs do Asian food, it’s amazing how much they vandalize it.

I don't think there's anything wrong per se with adapting a dish for your culture: if for no other reason than that some ingredients might be next to impossible to find, so you might end up having to improvise. The problem is when people try to sell it as "authentic", when it clearly isn't.

I'm an Indonesian and a big fan off Indonesian fried noodles (mi goreng). I must say, Uncle Roger was right about the noodles. It has to be egg noodles, but sometimes you can do rice noodles as well. And Gordon missed shallot. Indonesian rice/fried noodles always have shallot in it, mixed together with garlic, cut of chilli, and also MSG. I feel good also Gordon use a sweet soy sauce because that's an important thing on this dishes. Can't wait to be on your tour and I've reserved my ticket on your show in Houston!

Indomie is a long standing brand, as for myself, Indomie chicken curry and fried noodle are the best among other brands, but sedap brand specialty would be soto flavor..i personally love maggi chicken curry too and tried maggi pedes giler once and it was phenomenal!

@@gustru2078 Pork/Pig is forbidden due to the health risks of fats, toxins and bacteria. the meat and fat of a pig absorbs toxins like a sponge. Their meat can be 30 times more toxic than beef or venison. When eating beef or venison, it takes 8 to 9 hours to digest the meat so what little toxins are in the meat are slowly put into our system and can be filtered by the liver. (Imagine the effects of eating Pig in comparison to this…) Pig has more fat than muscle-building material and it is more liable to disease than other kinds of meat. Some of the diseases caused by the consumption of pork that science has discovered are trichinosis, characterized by hair-like worms in the muscular tissue. Muslims do not eat pork simply because Allah made eating pork forbidden in the Holy Qur’an directly. A Muslim must put trust on Allah more than anyone and obey. Eating pork is permissible only if the Muslims find themselves stuck in an area or place where there is nothing else available to eat (in order to survive).

@@gustru2078 Islam doesn’t have superstitions like “curses” or anything. It was literally founded in an advanced medical society compared to it’s Euro counterpart. Basically, pigs are dirty because they rolled in mud to cool off from the hot desert sun. Dirty things back then were *dangerous*, they carried more germs and bacteria therefore making it harder to prepare without getting sick. Pigs also spread a lot of diseases. Not to mention meat spoiled easier back then, especially since it was a desert. So small things like chickens and goats which can easily be eaten down by a village was more sustainable and easier to eat up than a massive pig. Also there could be other religious reasons, like pork tasting almost identical to human meat. Cannibalism is prohibited in Islam. Islam is also a religion that emphasis’s on cleanliness. Cats clean themselves, which is why a lot of Muslims own cats and view them as very hygienic. Dogs don’t clean themselves and would poop anywhere they like, which is why dogs are viewed as unhygienic and not really owned as pets unless they were super important (guarding, sheparding, hunting, etc). So *eating* dirty animals was completely out of the question. And for the boar part, that depends on the school of thought. In the end, it’s just something we’re taught by Allah and the Quran. We do it because we trust His judgment for us.

@@foggylegg6362 It's an acquired taste I would say. It's like marmite in that sense. Strong taste and smell, used in small quantities. Can put a really nice salty umami flavor to alot of dishes if used in the right proportion.
