Way less substantial, it doesn’t get the same firm bounce that gelatine gets when you add a more powder to the mix. Adding more agar just makes it crumbly and cloudy. It’d be more likely to collapse under its own weight or the weight of the cake on top of it. They make a kind of crunchy candy with agar that’s been crumbled into pieces and let to dry, but it looks quite powdery on the surface.

I think gelatin that comes in sheets is supposed to be more clear. And they sell flavorings that don’t distort the color too much. I also wonder if another material like agar might turn out well. But this is one of the most impressive things I’ve seen.

Agreed, agar is used to make water cakes in Japan... they are literally crystal clear like water ! Can be flimsier sure but still more accurate than the yellow good she used.

I like the hyper realistic cakes best if I can also believe that they are delicious. If it's a large percentage of gelatin, molding chocolate or hardened white chocolate to cake it doesn't seem like it would function as a cake anymore. This is very clever, but it's more like a unconventional material challenge, not so much a delicious cake disguised as a water bottle. That's why I loved the peach you recently made! That looked amaaaaazing and seemed like a wonderful little cake as well. :)

Hey, love your work. About the gelatin, I would suggest agar. It’s usually firmer than gelatin and many people use it to make clear desserts. Reverse spherification is also something fairly easy you could do to make droplets or even something like a runny yolk out of anything you like. I think molecular gastronomy in general has a lot of potential on making hyper-realistic cakes

For future purposes, sheet gelatin tends to be clearer than powder gelatin because it doesn’t need anti-caking agents, so sheet gelatin can be really useful when you undoubtably make another see through cake

In movies, they often use sugar to make glass bottles that are meant to be broken. You could use that for the actual bottle with a gelatin filling.

for the gelatin not being clear, you could’ve completely dyed it and played it off as flavored water and made an edible flavor packet to really seal the deal. regardless, this cake was super impressive! great work!

I think the super clear gelatin just has less bubbles. I believe agar agar has less color but I’m not sure how different it is from gelatin texture wise.

The super clear geatine does work; you just have to use distilled water and not stir in a double boiler. You have to be careful not to introduce particles in the water. Its how people make those rain drop cakes. I once used gelatine for a mountain lake cake. And the gelatine came out super clear. Nice job all the same!

I love your cakes, but a lot of the newer ones feel more like food sculptures than actual cakes with all small cakes made with molds and gelatin. Nothing wrong with awesome hyperrealistic food sculptures, but I sometimes miss the cakes that are large and sculpted.
