I grew up in Massachusetts and clam chowder was the go-to meal on Fridays. Fridays were meatless meals, so, no bacon. The chowder was thick, rich and flavorful. No bacon necessary for this iconic soup.

Clam chowder is also a dish that comes grom Washington State. It is creamy like that Massachusetts, but seasoned domewhat diffrrently.

Love NE clam chowder. Great to sub out the flour with a couple large tablespoons of plain instant mashed potatoes. I always keep some on hand to thicken soups.

Let's see...my best friend is from Detroit (9 Mile which is one better than 8!) and she's always raving about Coney dogs, Vernor's ginger ale, and...Detroit style pizza. That would be a good one! So what do you think about adding corn meal to the clam soaking water to encourage them to purge? Seems like they always did that in all the cooking shows of my yoot. ;)

I've seen bread bowls in NE plenty. I know SF is sourdough capital of the US, but I don't think it's unauthentic to serve chowda in a bread bowl.

@@AdamWitt This Masshole (as I've said too many times) confirms. Many places serve chowda in regular bowls, but quite a few serve it in bread bowls. Including another local chain called Boston Chowda Co. (It's spelled that way in their official business name.)

Chowdah's secret is in its simplicity. BUT, unsmoked salt pork is MUCH better than bacon. Why? Because smoked bacon, while excellent in a straight potato soup, is always upstaging the clams in a chowdah! Also, avoid Better Than Bullion clam base as it has a finish that tastes sickly sweet like molasses. Any sweetness is best when it comes from the carrots alone.

I was watching and really liked what I saw, until you boiled the clams! As a New Englander, I was devastated, no self-respecting New Englander would ever boil them! You lose all of the clam brine. If I did that, I would expect to be kicked out of my home and deservedly so!
