I watched brook clam fishing cause I was waiting on how to make clam chowder. I found you by accident and joined you. Love you both. You should have shown when you changed the brine to clean them. Something I learned that I never knew. Thanks! Love clams but not oysters, go figure. Lol

Dusting 1 cup of plain flour over the top of the bucket, encourages clams to expel sand quicker and eat becoming meatier. We do this with our pipis in Fiji.

If you set live clams in clean salted water to purge its important to sprinkle in a little corn meal (food) which makes them cleaner.

More flour = more thick. While I'm down with Bacon, and who isn't, and garnishes sometime ya just have to go with the classics. And here's where I drive the New Englander's nuts. I prefer Manhattan style clam chowder. A nice rich tomato based soup with lots of clams and veggies does me right. As always, keep it up kids and enjoy the life you're living!

Spider Crabs are big in the British Isles. There are a couple of KZbin Channels that show them harvesting big ones during the winter months.

My momma has made a mean pot of chowder for years. So good and the bacon just perfect with the bacon grease. Nothing like a good bowl on a cold day with some crusty bread dunked in the “gravy”. Ok now I want some chowder. Lol

Thanks for sharing. I cook clam chowder for our church every lent. I live in Iowa so dont have a good supplier of quality clam meat. Im going to contact my friend in RI to go clam harvesting this year. I can freeze the meat for next year. Thanks

Good stuff! Incidentally, I think steamers are soft-shelled clams - not hard shelled. Cherrystones, littlenecks, and quahogs/chowders are all the same animal. Steamers are a different clam.

I have seen those large clams at stores for so many years and it's good to learn how to prepare them. I often bought uncooked frozen chopped clams for cooking. One guy said to steam them with added white wine and garlic, as mussels are prepared, but that didn't sound right, given their size. I have tried clam chowder at most of the established places in Boston and other areas and here is my input. The chowder needs to be creamier and thicker in texture so use heavy cream instead and also add quality butter. This is not a food that is eaten very often so might as well make it taste at its best. In one recipe the potatoes cubes were added on the top at the end, but some were mashed and cooked in to add the starch, chewy texture and thickening. Chowder needs a hint of celery, but shouldn't be in it visually so simmer them in a tied net to be drawn out. Interesting take with adding chopped garlic and I'm curious how the chowder tastes as it is not a traditional ingredient. It adds time, but the clam broth should have been boiled/reduced down for more flavor. I am not a fan of Thyme since I no longer care for the taste of turkey at Thanksgiving. We switched to serving spiral-cut ham.

To get it thick add some instant (mashed potato) it will thicken it right up. This is along with your cut potatoes.

Chilled bowls with butter in the bottom to be melted by the chowder. Try it sometime.

just so you know, quahog is the american indian name for clam...all clams are quahogs, and there are different sizes,,little necks are the smallest, then middle necks are a little bit bigger, top necks are yet a little bit bigger, then anything bigger than that they call chowda's. i was a shell fisherman in rhode island for 10 yrs, back in the 80's

They don't "travel". Their spawn is free swimming called "Veligers". They drift with the currents and as they slowly grow they become heavy enoght to fall to the bottom. If they land in a good area then they dig in and live.

What’s the difference between Boston clam chowder, like you made in this video, and New England clam chowder? Some may say what you made today is New England chowder, but it looked totally different from the New England chowder I’ve always had. Love from Louisiana.

I went clamming last summer. we didn’t have rakes so we just drove underwater and picked them up. Then a huge jellyfish stung me on my face. It was terrible but worth it in the end.

a steamer is not a quahog, it is a soft shell clam, they are also known as Ipswich clams, belly clams, long neck clams, pissing clams, and steamer clams..tottally different clam..

Good idea mashing the taters. Whenever I make a soup or stew - stewp I call it - I use mash potato flakes for thickening instead of flour as it adds flavor and doesn't give it a starchy taste.

People. Clams do not expel sand. There is no sand in clams or quahogs. Any dirt you see is from the outside of the shell. Eat any quohog raw and you will see what I mean.
