WARNING: Do not make too much cuz you will eat them all way too fast!! These were my ultimate childhood treat. They are the perfect movie snacks, and pack up well as an edible gift for the holidays, or a hostess' gift. They are also vegan (if you use cocoa instead of Ovaltine) and gluten-free! ถั่วกรอบแก้ว
The peanuts are coated in crunchy candy coating flavoured with cocoa, and sometimes a little coffee. They're rolled in toasted sesame seeds which give you that munchiness of sesame snaps. Few snacks are more addictive than these and it only takes about 20 mins on the stove; no oven needed!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. If this happens it's likely because your heat was too high, and the sugar crystallized faster than the nuts could roast. Frankly, I think you are the smartest person I know that ever have a cooking channel. I mean you have the capacity to do greater things rather than just running a cooking channel on KZbin. OMG! I cant tell you how happy I am to see this recipe! I was a Peace Corps Volunteer in Mahasarakham over 30 years ago. I made it my mission to secure several bags of these every time I went on a 'tio'. I made your recipe and it transported me instantly. I've tried to make various versions of these over the years and always disappointed. The coconut milk was the key. Sublime! And even better with almonds (though I did very lightly toast them first). Hey! I think I found a solution for the "undercooked" peanut problem! I did this myself - I cooked them as directed, but probably rushed it a little. They came out good, but were soft and tasted a little off. I looked up a recipe for roasting peanuts in the oven, and used that, and cut down the time. What worked for me: I just left them on the baking sheet with the silpat, and then put them in the oven and turned it on to 350F. I set a timer for 10min after the pre-heated chime sounded. So, maybe like 15min total? I pulled them out and let them cool, and they're perfectly crunchy and have that roasted peanut taste.

I love that in Mexico, raw skin-on peanuts are really easy to find. I have a whole fresh kg just in my pantry for no particular reason.

I watched one KZbinr's recipe for tanghulu (basically crispy-sugar-coated strawberries) and I remember thinking they seemed to "shatter" like glass. I thought the description fit here too. I wish I could make these! But I'd probably destroy one of my cheap pots/pans in the process. XD

Were you happy with the end result on your batch? I know there are various elements that may affect the end result. I had more clumps or sugar outside than on the peanuts. 1/3 of the peanuts had lost their skin during the process. The sesame did not stick on as well. The peanuts although not raw tasting, were not crisp, although the coating was.

Made this today and unfortunately, mine came out soft, too. A few tips: 1. I kept the heat very low, so I don't think the problem is the flame. It's the peanuts themselves, which are huge, about 2cm long. They didn't have enough time to roast before the syrup dried up. So go for the size in the video. 2. A non-stick wok will work better than a conventional one. Not that the sugar will burn, but I still lost quite a bit to my pan. 3. I did 300g of peanuts but I didn't scale up the sugar, and I find it sweet enough. Hope everyone succeeds!

Forgive me if I've duplicated questions, but: (1)Can you sub witth coconut sugar? (B) Also, (for the adventurous): How about either red pepper instead of coffee, or pepper flakes instead of sesame seeds? Will the capsacin muddle up the sugar chemistry? (notice how I used "muddle" instead of *expletive delete*?)

Hi Pai - this is definitely going to be my next attempt - I didn't eat them in Samui, never saw it but it sounds delightful. I love your techinical detail - well done, a true professional. I taste is very good, I made two batches however is can get the sesame to clign to the peanuts. I waited to see wet spot but after 32 minutes I pulled it off the flame so it didn't burn. I am my waiting long enough.

We have a similar sweet here in Argentina called Garrapiñada which is basically peanuts coated in caramel with vanilla essence sometimes, the are sold everywhere, you can find street vendors on every corner and every park in my city and I agree with you, they are so addictive Now I can't wait to make this Thai version, thanks for sharing this recipe with us :3

Maybe this is called ถั่วกรอบแก้ว หรือ ถั่วเคลือบ, ที่ใช้คำว่าแก้ว(glass) เพราะว่าน้ำตาลที่ใส่ไปละลายเคลือบอยู่จะแข็งเป็นแผ่นใส(กรณีที่ไม่ใส่ส่วนผสมอื่นจะเห็นน้ำตาลเคลือบสีใสแววๆหน่อย)และเวลาเคี้ยวจะกรอบแตกเหมือนเวลาทุบแก้วให้แตกเป็นเศษเสี้ยวเล็กๆ. I think this is not difficult for you at all to translate from my Thai explanation to english lol.

We have something similar in France called chouchou. The flavour is usually vanilla. It is indeed impossible to eat just one....

We also have a similar street food in Argentina, also with vanilla. We called it praliné, which is confusing because in french the term "praliné" is a paste. The term praline, pronounced "pralin" would have been a better choice, as that is what almonds with caramelized sugar are called in France (correct me if I'm wrong). Spaniards have "almendras garrapiñadas", which is basically the same thing. Now, adding coffee and coconut milk and sesame seeds sounds great, I'll definitely try that.

Hello Pailin, I really enjoyed your video on “can’t-stop” candied peanuts!! A couple of years ago I had spicy tom yum nuts in Japan and I fell in love with it. I have been looking for it in Canada since then but no luck, so now the only option for me would be to make it myself. It’d be so great if you could share a recipe for that. Korp khun ka!🙏🙏🙏

there is no asian market where i live. 😅 i will definitely buy the skinned peanuts when i go to the next town over after quarantine is over. i love love these when i was younger.

When I was living in Thailand, I used to make these with skinless peanuts all of the time. The sugar sticks to most all of them and it really wasn't a problem. I never could find raw peanuts with the skins on them, so I used what I could get. If you can skinless raw peanuts locally without having to drive to the next town, I'd just buy those and give it a try.

@@gozu9455 hmmm, already roasted might not work since cooking them in sugar kind or roasts them, they might burn. But at least with the salt, you wouldn't have to salt them. Try a one cup batch and see. A simple recipe is 2 cups peanuts and one cup sugar, so you could just scale it down as an experiment. Then if it works, try her recipe. I think they would over cook though... now I'm curious, lol.

"แก้ว" (Glass) in ถั่วกรอบแก้ว come from the shine of sugar that melted and glazed the peanut, that's all my grandma told me

Here in Europe Ovaltine is named "Ovomaltine" as i thought a swiss product. Seems these peanuts will make one adicted ;-)

Grown in Switzerland I belong to the ??% of swiss population who hates OVO (... and cheese, but hey, in stead of it I love marzipan and raisins) so I guess Nesquick, Caotina or just cocoa with some additional sugar powder would work great in my case 😅. Now I just need to find raw unpealed peanuts 🤔 ... Thank you very much for sharing this recipe.

I need help with this recipe, mine never re-crystalises. It remains gooey and sticky to the end. When left out to cool, it will remain shiny and stick to the surface below and I have to scratch off with a knife. I have done it FOUR! times now, varying different things but similar outcomes every time! Like, 😭😭! Help! - 1st time, I didn't have coconut milk, not something you see in my small town. I used unsweetened yoghurt. - The next time I tried condensed milk. - The next time I eliminated that part all together and used no milky thing. Decided this time to let it on fire for longer. Same problem, but with burnt gnuts. - Today I used just gnuts, salt, sugar and nescafe. The same problem but now the caramel smells and tastes kind of burnt even though gnuts are not. Where am I going wrong? Could it be that I am using the wrong pot?

P’Pailin I think they named it ถั่วกรอบแก้ว is because the end result they look kind of shiny like keaw. 😁

I once toasted some sesame seeds to make hummus, not knowing they were already toasted. (Couldnt read the japanese label). Needless to say my hummus was extra dark. Lol

If I were to make them more sweet and savory would I sub the ovaltine for say milk powder and maybe add onion powder, a bit of salt and chili flakes?

Sure! The same method for candying applies. You can change up the flavour however you like.

Ovatine was invented in Sweden in 1904 and was popular in the states by 1915. Soldiers were drinking it in the trenches. I think we know what Ovaltine is.

i love how thailand (and malaysia, singapore and some other places im sure) use milo and ovaltine sometimes, growing up in australia i love them so much and its so cool to see other countries enjoying them too and seeing how they use them. in australia no one really does anything more than follow the package directions so its cool to see people use them in cool ways for a change aha.
