I think Francesco was one of those people that just wanted to have a restaurant where only the "elite" and wealthy would come to. Kinda like that one guy from Juniper Hill on Hotel Hell.

This reminded me of the one Hotel Hell episode "Juniper Hill" too where the owners did the same thing basically only catering to the rich and their friend's who they let them stay for free

The funny thing about those cases is the owners picking remote blue collar towns to hold their upper crust, high end, invitation only establishment, and complaining about lack of customers 😂

Yes, and like the guy who opened his private club in England for £200, 000 a year for membership. He thought prestige would make people flock in, and when they didn't he was left with the subpar chef he'd hired (cheap, no doubt) and his tearaway fledglings who couldn't really cook. Oh! What to do? Mysteriously (or not, depending on how jaded you are) the place burned down. End of the story of a pompous man who thought other pompous people would want to just be among their own kind, and pay him to provide them with the setting, and cheesy shark for a nice change from actually good food.

As a long time cook and sometimes hardware store clerk in a small town flooded with tourists every summer, I swear you can't dismiss your locals. They spend their money where they feel most welcome, where they're respected and known by name. They're your bread and butter when the tourists aren't around, and they will spend more money at a place where they feel welcome than somewhere they're ignored. This man doesn't get it. The old owner made that community feel warm and welcome. This guy has all the warmth of a dead fish. Shame. 8:37

I'm in one of those now. The food I'm being asked to serve is a bit embarrassing, and I know my community and I know for a fact they would fill our restaurant every day for better food. But all he thinks of is: keep food costs low and keep prices high. He's sure it will pay off eventually. I'm sad as a cook. Feel like I'm just being wasted on an owner who doesn't see sense and doesn't care.

that was back when the pound was 2:1 to the dollar, so it would have been $60k USD back in 2003. As someone else mentioned in another comment with inflation that would be like $85,000 today. Also I'm sure the cost of living in rural Wales isn't very much either.
