Years ago I remember somebody telling me at a luncheon, that their grandad use to work at Dr Pepper and made the syrup mix for Dr Pepper. He said that his grandad told him that Dr Pepper does not contain any prune juice whatsoever. All he would reveal to me was that it was a unique type of cherry extract. This extract is what gave Dr Pepper the prune taste, but without the prunes. Also he stated, the reason why no body has been able to copy the taste is because the amounts have to be exact otherwise any deviation will cause the product to taste nothing like Dr. Pepper. Many off brands now have totally given up on making Dr. Pepper using real ingredients and have opted to use artificial flavoring to get the product to taste similar to it. This of course being a shortcut and not a good one at that. In the end it gives the drink a weird aftertaste. Of course I have no idea of the validity of this man's statement but you can take it for what its worth. I just always found it interesting. Anyway the smell of a old time soda fountain shop, was the taste profile of the drink. It was basically taking a smell and making it drinkable.

@@Omicron9999there is plenty of fruit varieties that are bit uncommon, and almost never used commercially. Commercially used fruits are out of fev common varieties, majority of varieties see litle commercial cultivation. Using any of them would make your product 'unique'.

The primary flavor compounds in Dr. Pepper are from Cherry and Cinnamon. Ditch the Raspberries and Prunes for a mix of Morello and Rainier cherries. Then replace the licorice root with Kola nut. Swap the citrus extracts for zest.

Exactly. Not sure about the cinnamon though. I'm drinking Dr. Pepper as I'm writing this. It has a flavour of a mildly bitter cherry. (if that makes sense) or may be it's a hint of spice from cinnamon not sure. it's so saddle ... I just love it. The cherries that I remember from my childhood grandmothers garden had a pretty similar flavour,they were darker in colour than normal ones Point being... that the main ingredient ,when trying to replicate Dr. Peppers flavour, should be the cherries .

BUT, there is a cherry dr pepper, which is a different bottle, different flavor, and that does have a cherry flavor. also mr pibb tastes different then dr pepper, and i can taste the cherry in that

In high school I gave a Dr. Pepper to an exchange student from Finland. He took a sip and said that it tastes more like Dr. Medicine. He drank it all anyway. I’ve heard that if you grow up without trying it, soft drinks like Coke and Dr. Pepper are strange to an adult palette. I still don’t understand why anyone would drink Moxie. It was like drinking a fizzy Jaegermeister without any alcohol. I did try some of the strange drinks at the Coca-Cola World tasting room, like Beverly soda from Italy. Very bitter, but I kind of liked it after the initial shock of bitter faded.

I have a lifelong addiction to Dr. Pepper (I'm literally drinking one right now), and like most Americans, broke as hell during college. Dr. Thunder is pretty close, but I drank so many during finals my sophomore year that I got sick (which doesn't happen with the real thing, btw) and now even the smell of it turns my stomach. That said, I'd like to start drinking Dr. Pepper because some of their business practices are problematic so I'll be following this closely. :)

Something to consider....the Dr. Pepper with the pure cane sugar sold here in the states tastes different than the Dr. Pepper using corn syrup. Green cans vs red cans.

Aaron Kaase the red cans sold here in the midwest USA contain high fructose corn syrup. The green cans with the small Dr. Pepper logo in red contain 100% pure cane sugar. It is available year round. I believe the green cans are considered Kosher. Same price for either variety. I find the green cans to be too sweet.

Yeah Moxie stands alone in the soda world. My high school Geometry teacher went to college in upstate NY and near the last day of school he brought a couple bottles in for the truly brave of us to try. He warned us it tasted like cough syrup and that's pretty much how I always remembered it...awful! Fast forward like 25 years and I'm vacationing in Vermont not long ago and there it is in the local convenience store. I drank it down and really liked it this time...not that much different than birch or root beers, only with a slight medicinal quality. Actually quite refreshing. Time changes everything!

Just a couple of observations of my own: When I smell the actual drink, I detect a floral note like rose. Also, you have to remember that Dr Pepper originated in a small Texas city around the year 1885. So I don't see how the drink could contain any fruit or fruit juice since these are perishable and would likely not always be available throughout the year in that era.

In my early drinking years, I was introduced to a drink called a Dr. Pepper. It was a mug of beer with a shot glass of Amaretto sunk to the bottom. It's ment to be drunk in one go. When you burp afterwards, it tastes like Dr. Pepper. I'm not sure what you should do with this info but there it is.

Ha, I'm glad someone else brought up the almond/cherry thing. I like almonds, but I can't stand almond flavoured things like marzipan. For years anytime I've tasted something that was labelled as 'cherry flavoured', it's always tasted strongly of almond (not the nut itself), and hence I don't like it. I'm usually told that I'm insane for thinking they taste alike.

I'm old enough to remember when Dr Pepper was only available in the US. Being my favourite soft drink, when I was younger I used to look forward to having it either on the plane to Florida for a holiday, if we were flying on an US airline or getting one from the vending machines at the car rental places. I'm sure many people also remember that soda cans used to be much bigger in the US than in Canada and that it was probably only in the early '90's that they increased the size of Canadian cans.

You certainly have a point about the similarity of almond and cherry flavouring. I tried making cherry ice cream once using preserved cherries in maraschino syrup: It was essentially soft pink marzipan ice cream. No hint of cherry about it at all. Fortunately I like marzipan, so I ate it anyway, but it wasn't quite what I expected it to be.

I think there is fig syrup in it. At the time figs were used for a lot of remedies. Also it tastes like the Italian ham glaze I make with fig syrup.

Pardon me if this was asked already but have you tried Dr. Pepper made with cane sugar? The one you get in stores is sweetened with HFCS. I used to live in Texas and at one point there was a bottler there that refused to used HFCS and only made it with cane sugar (it was called Dublin Dr. Pepper since it was made in Dublin, Texas). It tasted noticeably different that the HCFS variety. Better, in my opinion. Much better. Unfortunately corporate eventually was able to stop the Dublin bottler from using the cane sugar. AFAIK, real Dr. Pepper isn't available anywhere now. A total shame. But, it's possible the difference in flavor is due to the different sweetener used. Perhaps use HFCS as the sweetener next time to rule out the sugar being the difference?

One fruit ingredient in Dr. Pepper is called Black caps, They are a small blackberry type of fruit Grown in Oregon . I picked them as a child for pay and the farmer said that is what they were used for. If you taste them you will know right away it is the main flavor ingredient

I'm wondering is cooking the mixture down a little longer to thicken the syrup and intensifying the flavor, just a thought. Also keep in mind Dr.Pepper's Brix is 5:1 5 parts water to 1 part syrup.

When I was young (about a hundred years ago!) my mom would serve us hot Dr. Pepper with a slice of lemon on cold days - It was really good and really tasted different from cold Dr. Pepper. It might be interesting to try a comparison of the drinks heated up - might give you some clues as to the makeup.

Hi Glen. 2 things. You CAN get Pibb Xtra in Canada. It's available in coke freestyle machines. A Wendy's near me when I lived in Canada had one. Secondly, try and get some real sugar dr pepper to compare with the recipe. Previously I had only seen it in Texas, but I found some imported here in Australia recently. It's lovely and distinctly different from the regular stuff.

Would it help to have not pre-sweetened the syrup? I feel that being able to adjust the sugar level helps adjust the end flavor. I know that with certain drinks, more sweetener will help with the flavor while other drinks suffer.

Living in Texas all my life, brief hiatus to Colorado, and FYI Dr Pepper is made two ways. The can you had on your counter is made with high fructose corn syrup, however there is a one made with 100% Imperial cane sugar. There is a MAJOR taste difference between the two with the only thing changing is the sweetener

Thanks @Phil Arbogast - we're in Canada, where cane sugar isn't taxed in order to promote the product of corn farmers. So that can is in fact made with cane sugar.

(a standard Texan here) i grew up on DP and it is still my favorite. one thing to consider is the cane sugar and corn syrup versions taste VASTLY different. standard cans will be corn syrup unless labeled as Dublin Dr Pepper. just in case you are still playing around with the recipe

We’re in Canada, and that’s a Canadian made can of Dr Pepper made with cane sugar (says so right on the side). HFCS isn’t used as much here because we don’t tax imported sugar to prop up corn farmers.

Part of the classic need for all that sugar is as a preservative and stabilizer. Since anything you make at home will need refrigeration and have a relatively short shelf life, you could theoretically make it completely without sweeteners, and have drinkers add the sweetener they like, such as a sugar syrup or monk fruit extract.

@G W I would've loved to try that as a Pepsi fan. Coca Cola has a similar thing called Coca Cola Life, only sweetened from Stevia. But I haven't seen it in a while where I am, so maybe that got discontinued as well

deIlluminati Coke 'Life' in the green can is still available here in our part of Canada, and I saw it last summer in small town Arkansas when visiting family. So it's still being made in some places. At some point we'll work out versions with low to no sugar... but it's a long slow process, especially on a shoestring budget.

I think you're on the right track. If it's supposed to smell like a pharmacy (soda fountain) from the late 1800s, the flavors have to be classics. (Some of these online lists include tomato and carrot!) You might also consider, caramel, honey, rum, and strawberry, as these are traditional flavors for sodas and medicines. Here's what I think the 23 flavors are: Allspice, amaretto (almond), anise, birch (wintergreen), black cherry bark, caramel, cardamom, cherry, cinnamon, clove, ginger, honey, juniper berry, lemon, licorice, molasses, nutmeg, peppercorn, prune, rum, sarsparilla, strawberry (not raspberry), and vanilla.

The only way you can get close to the original taste of Mr. Pibb is by going to a Braum’s Restaurant/Fresh Market they sell a 12oz Cans or 2 Liters of a Drink called "Braum’s Special" if you had to rate it to the closeness it's about 70~75% close to the real thing. The interesting thing is they will only open new stores within a 300 mile radius of Tuttle, Ok

Robert Wheelock I made a similar connection when I tried Mr pibb for the first time after I had been a fan of dr pepper for years, the pibb can was labeled as a spiced cherry beverage in small print by the FL oz indication.

Thanks for all the recipes, inventiveness and inspiration. I make my own kombucha and tired making cola kombucha loosely based off of your recipe. Doesn’t really taste like cola but is good none the less. Trying your Dr Pepper recipe for kombucha right now. Experimenting is half the fun in the kitchen (much to the chagrin of my wife). Sounds dedicated... You know what I would do? I would run a Gas-Chromatograph Mass-Spectrometer to characterize the existence and incidence of various chemicals. You should be able to identify the spices, fruits, etc. involved along with having a pretty good idea of their concentrations. I applaud the dedication, but science has come up with an easier way ;) It's not too expensive a test to run at a local lab.

Quick takeways : too much sugar by comparison (maybe), Dr. Pepper does a distinct Cherry flavoured variety so I doubt that is the base component. When you mentioned almond however that sort of hit something for me as someone who favours almond paste/marzepan in products: What if dr.pepper is based on marzipan? meaning 7 parts almonds 3 parts sugar.
