As an executive chef, I feel the need to tell you…. You have the right attitude for cooking! Just put stuff together. Sometimes it’s amazing! Rarely is it BAD! And most of the times it’s perfectly good! Keep being adventurous and try adding new elements to your repertoire.

As a sous chef, I have to, of course, say "yes chef!" I'll just add that the beauty of cooking is that you can (almost always!) eat the mistakes, thereby destroying an evidence of a kitchen faux pas. Keep it going, chef Billy!

I found some information for you about the squat lobsters ….. Their flavor is a unique blend of lobster and shrimp say lovers of the savory South American crustaceans called “langostinos.” Simmered with garlic, lime juice, peppers and onions, langostinos are enjoyed in dishes ranging from linguini to tacos….they are found everywhere but Arctic and Antarctica.

I’m thinking that beer is a budget beer which is fine, but a lot of Canadians experiment with a local small brew houses. Change up the flavours with the season and foods. I’ll grab 2 -4 different kinds with say 4 - 6 of each and friends get to choose if they want a lighter, heavier, stronger or lite. Great episode. Enjoy 🇨🇦

Or maybe I am just too old to know what’s cool anymore 😂 Loving seeing this local content in my stomping grounds. Your much more positive on squat lobsters than I am. The Ramen spice packets are pure msg. So true to call them garbage, lol.
@ryantallent50266 ай бұрын
I don't know what is in those spice packets, but there is nothing wrong with MSG. There is so much misinformation, disinformation, and conspiracy theories about it. It can all be traced back to anti-chinese sentiment and hysteria from the 1970s and 80s. They call it Chinese Restaurant Syndrome, but it's more accurate to call it racism. Do you notice that Chinese restaurants don't have those signs anymore? Because they all went back to using it when the heat died down. You can even buy it at the store. It's called "Accent" and I put it on most meat and seafood that I cook at home. There is no legitimate science to back up any of the health claims made about it.

Squat lobsters are crustaceans that look like lobsters but are more closely related to hermit crabs. They are dorsoventrally flattened, with long tails that curl under their cephalothorax and have ten legs. Their first pair of legs is usually much longer than their body and has large claws, while the next three pairs are used for walking. The fifth pair is much smaller and has very small claws that are thought to be used to clean their gills. Squat lobsters also have long claws that can be twice as long as their bodies and long, whip-like antennae. Yes, squat lobsters are edible and are considered a delicacy in some parts of the world. They are often used in seafood dishes and sold in restaurants as "langostino". Some say they taste like crab or lobster, but have a firmer texture.

Back in the mid 70’s, Sizzler Steak House an American restaurant chain, had promoted Steak and Langostino on their menu. The TV commercials described the langostino as mini, deep sea lobster served in a butter sauce. I was about 12 years old at the time and I was curious about what they tasted like and found them delicious. Decades later, I discovered that I had eaten squat lobsters that had been imported from Chile. Squat or not, I loved them.

Hi there !, What you are eating there is what we call "small lobsters" in China. That is the direct translation. They are very popular in the south China region and Hong Kong. I am not Chinese but live in China/Hong Kong now on 23. year !!! Usually they are served with very spicy sauce. I believe they are cooked first and the put on a tray in the owen for a few minutes. You only eat the meat "body", don't try to eat any other parts of it. I personally like this dish very much !! Good luck catching some more.

For future reference, cut the end off the arms and then roll over them with a rolling pin or glass and you will squeeze out the meat from them. It is just a tiny bit, but it will add up with that many and be good to put in your sauce.

There’s a short video on “EVNautilus” channel on the “Squat Crabs”. There’s actually three but there’s lots of exercise videos too, it seems it’s a type of weight lift similar to a regular “Squat”. I’ve eaten them pretty much fixed like shrimp scampi with noodles & garlic,parsley butter. Your holes on your trap may need to be opened a little wider if you continue to catch small ones only. Mine did, but I was after Crabs @ Gulf Shores, AL.

Hinged hull strainers that open like a door are available for easy cleaning. um....we used to call that Brewhouse Pilsner, the Brewhouse "Enema" back in my budget beer youth. If you're going for a budget beer, go for AGD or Lucky Lager. In BC you've got a plethora of other options and it's totally worth upping your budget a few dollars to try out the micro breweries. Beer culture is huge on the west coast and just about every small town is going to have some sort of small artisan brewer to try out. If you go to the tap houses, you can get a growler to take home with you and drink over the next day or two (they don't stay fizzy very long) and then re-fill at the next one.

Looks like crawfish!! Saute with onion, celery, bell pepper, green onion, garlic and butter then add chicken or vegetable stock(water works too) then make a medium color roux that you add to the squat lobster or crawfish and let cook. You want the sauce thick enough that when you dip a spoon into the sauce it clings to the spoon and slowly runs and drips off the spoon. Serve over rice or eat alone with garlic bread. That is the way my old Cajun mawmaw taught me to make crawfish or shrimp etouffee. Add Cajun seasoning to taste as you let it simmer on medium low. The best way is to cook it the day before so the flavors can marry overnight. This is why some foods taste better the next day. If you ever try the recipe, enjoy it, and don't overthink it, it's easy to make. Recipes that I see for etouffee make it so much more than it needs to be when this old Cajun way is easy.
