I know parking lots aren’t super fun but seeing as this is a big family restaurant it could be cool just to extend the sides of the baseplate to double modular size and make a parking lot around the perimeter, maybe you can spread out the market stalls more and add people setting up fire works or doing a dragon dance.

If you keep the facade as-is (or very nearly) you can push the kitchen and the bathroom around to the back left corner, leaving not as much depth to make up from spares. Regarding the double side aspect, you could snug one side up to the edge but leave the other as an alley, perhaps with access to the kitchen. Modulars don't always have to butt against each other. This looks like a great set to tweak into a modular and I hope we get to see your version.

Already ordered a bunch of bricks for walls and tiles for the sidewalks. Even some tiles for the floors of the restaurant. Super excited for this set

This is easy for me. I'm making a 32 x 16 corner with the 32 (and main entrance) facing the street. Just knock out the side with the fish tank (move the tank in a stud or 2) and add a wall to the back (and extra stairs to the roof). It will fit nicely next to my redone sesame street 16 X32 (main entrance on the 16side) to complete the alley which leads to my Sanctum Sanctorum.
