We full-time live-aboard in our ExpeditionVehicle. Although we have plenty of cargo capacity for plenty of package commercial factory food, we prefer: * fresh local seasonal organic. . To stay in keto/Paleo, we immediately adapted this recipe using cauliflower noodles and garbanzo noodles. . At the local Cash&Carry restaurant supply, we acquire tiny packs of teriyaki. Kikkoman is one brand, their 6ml take-out packs are a nice size to get just the right amount of seasoning for each member of the crew.

a) Similar to a factory freeze-dry meal from MountainHouse-type suppliers -- or a can of tuna -- those are merely a foundation for adding fresh foraged animal protein and local seasonal organic vegetables. . b) For mouth-feel -- and carry flavors, plus create a 'linger' -- we add fats and oils to any recipe. Our preference is coconut oil, MCT, and fresh organic olive oil. BACON!

@Loretta, We are 'label readers'. We try to avoid MSG-type 'flavor enhancers'. We keep hearing about their detrimental effects on the gut lining... leading to leaky-gut... ... and apparently the cause of auto-immune 'diseases' such as allergies and arthritis. . A long life is a good goal. A long healthy life is our goal.

Frozen hash browns from the grocery store dehydrate really well in a hot-air dehydrator, also too.

Looking for an opinion, I know that it is common to pour boiling water into a freezer bag to make your meal, but what about those Crispers chip bags? The inside almost looks metallic (almost kinda like what you’d find in a commercial freeze dried meal bag) and I actually did a couple tests with one bag (that I ate the chips out of already 😄) and poured boiling water into the bag and it seemed to hold up. I’m entertaining this idea b/c this type of chip bag might be more reusable and easier to clean out then a ziplock and can still be sealed up at the top like a ziplock bag. 🤷🏼‍♂️

Hey Chef! A few ideas for ya. You can usually find Betty Crocker hashbrowns in with the instant potatoes section. Also, in some stores, you can find institunal packages of hashbrowns. 5# box for under $10. Usually Sysco brand. Speaking of Betty Crocker, have you ever used the dried potatoes that come in the boxes of scalloped or au gratin potatoes? Using the sauce packs to make a potato soup or clam chowder?

Great suggestions CC. As I've been traveling around the country, the hash browns are a hit or miss for many grocery stores. Some it's an easy find, others...no where to be seen. And the BC products can be a solid substitute but can take longer to hydrate.

great Q. you can obviously make some tasty sweet and savory griddle cakes. I tried using pancake/scone mix in a chimney pot and it just created some odd dumpling type pieces. It was edible but not great. You really need the lower heat/more surface area to cook up batters.

I made pholourie mix dumplings cooked in a wet brown sugared ham and pineapple mix .... Yummm! Pholourie has yellow split pea powder, so some extra protein.

@Randy, We make our pancake mix using coconut flour and tapioca as a base. To stay in keto/Paleo, we use this as a foundation: * for a yummy empanada using local foraged animal protein. * samosa and Irish meat-pies. * a fantastic 'haggis' using spiced ground meat -- beef, goat, catch-of-the-day -- with oatmeal... and our pancake mix as a shepherd-pie topper. After baking, hit it with the propane torch for extra crispy crust. A crowd pleaser! BACON!

@steve, We mule-pack hunt north of Yellowstone at 3,000m/9,500'. That dang water never gets close to a boil. It just sits there smirking at us, us glaring back at it. Inevitably, after about twenty minutes, we call it a draw...

instant hashbrowns are stupid easy to find. Get one of those Betty Crocker hashbrown baked meals you find next to the stuffing mixes. I'm wondering if anyone has done a keto or low carb version of "ramen bomb" using dried miracle noodles.

@Garo, Excellent point! We owned a restaurant business for ten years. I am a semi-retired Physical Therapist specializing in nutrition. We see no purpose for carbohydrates. Maybe, occasionally, prepping for a marathon, but other than that, most bodies tend to do better in ketosis... burning fats and oils for fuel instead of sugars. . Think of a campfire, feeding it a constant supply of kindling. Those are the sugars, significantly less efficient than one big log -- a palm-size serving of animal protein with each meal of vegetables. . An aside: We aim for twelve servings of vegetables daily. Because of the sugars, we limit fruit to one serving daily. This works for us, your physical body may be different.
