Hey chef…. I know this is an older video, but I have some suggestions on a good knife…. In addition to a camper/outdoor cook, I’m a hunter. For years I used traditional fixed blade knives for skinning and processing my game. Invariably they would dull mid process and I’d have to resharpen. Several years ago, I switched to foldable, replaceable blade knives. Haven’t looked back! Check out Havalon, Outdoor Edge, etc. foldable, lightweight, super sharp, and when they eventually dull, just replace the blade!

The national parks may not have the Huts, but in the New Hampshire white mountains we have a number of huts where you can overnight. They’re all on or very near the Appalachian Trail, but most of the people that stay there are just hikers who don’t want to carry all that gear for an overnight. They can be pricey, but I’m sure those huts that you stayed in. We weren’t exactly cheap.

I know you're a chef, but the thought of slicing toward oneself while cutting a potato bare-handed camping in the middle of nowhere is scary. Surely a cut-proof glove and a little cutting board would be worth the added safety.

Hey C. Yes, for sure. I am a chef and have a lot of experience chopping/cutting. You do what you're most comfortable with and packing along a mini plastic cutting board can be helpful. Interestingly, many grandmas and moms around the world don't use a chef knife and cutting board. It is all done in this style with a smaller pairing knife.

Although it sounds scarier than it is, look up the Via Ferrata in the Italian Dolomites. I did the Bocchette loop, just east of Pinzolo.

The Picnic kit is not practical for me - you can have the knife or fork, but not the knife and fork. What's the point? I have the Nomad kit for a few years, it's great in general, but No12 has definitely not the best serrator. I've replaced it with the Victorinox foldable paring knife - its serrator is a perfection.

Love this video subject. Thank you sirs. I like the Tacray and AG Russell. I definitely prefer a button lock over a lock back, it's easier and safer to close. Wow! VG10 is a great steel for such a purpose. Tacray for me. It's got a good price, design and steel. A winner for sure. Blessings

I use a Soto Helix pour over and I love it. It compresses down flat, so uses very little space in my pack and takes cone filters, which don’t weigh anything. As far as keeping it hot, I use a Yeti insulated coffee mug and I have nice, hot coffee for at least an hour, even on cold mornings. Never seemed to have any problems with slippage and it is a metal-on-metal situation.

Hate pour over coffee but specially for camping. By the time is in your cup is cold, actually it is cold most of the time. I like french press, if I’m camping or at home by myself I use a Zyliss cup, even though is plastic is double wall with a lid keeping bugs out, for 2-3 people I bring Stanley press, they’re both very easy to clean with limited water or sometimes I bring a stovetop espresso.

I like my coffee very hot so pour overs do not do it for me. I also like it fast and easy to clean. I have the Brutek French press with the bottom that screws off to empty the grounds and hate it. It is still a mess to clean. So now I have an Aeropress XL. For me that works fast, coffee is plentiful, very hot and it is easy to clean. They also recently came out with a travel model that is compact and easy to pack.

Great video but I’m pretty sure your grind for the pour over is too course. Needs to be finer. That sort of coarseness is great for cafetière or cold brew but not pour over.

Hi Chef! I'd like to know how you manage to carry the leftover ingredients, like the remaining head of cabbage and the chopped veggies? The head can't possibly fit in a bear canister. With these ingredients, especially the sauces, do you plan every meal to include those ingredients?

Hey EDG, we have over 300 trail-tested recipes on the website and the goal is to have something for everyone and every style of outdoor adventure. I wouldn't select this recipe for a longer haul backpacking trip because of the bulk. But it is a fantastic recipe for a road trip, day-hike or trailgate. I would suggest the wonton dumpling bowl soup recipe or beef mango fried rice or any of other great Asian flavored options for packing in your bear can. Re leftovers: there usually aren't any because we eat them all! 😂. But any meal plan should be mindful of overall portions. All of our recipes note how many portions they create and that can help limit your leftovers. Let me know if you have any other questions. Cheers!
