The Philippines was under Spain for more than 300 years which is why there are some Spanish words in our language. "Noche Buena" is for the feast on Christmas Eve while "Media Noche" is the feast on New Year's eve. 'Hope you guys enjoyed your food. 😊

*Noche Buena is a Spanish word and that tradition well came from them... we adopt Noche Buena to be part of our culture and mix it with Asian culture... but if you are here in the Philippines generally to well-off families... put Pork Lechon, Grilled Seafood, and of course Chinese Ham like Majestic Ham or Excellente Ham on the table... But if you are a middle-income family, Chicken Lechon is good enough for a feast with an average size of Pork Ham... this food was mentioned are for Dinner before Christmas eve... actually the food that we eat on Christmas eve is just a simple Hot creamy chocolate and we call it Tsokolate eh and we pair it with Ham sandwich, Biscuits, Churros, and Kakanin or rice cake...*

The food items you prepared here are typical for any Filipino party celebrated any time of the year, if not for a typical weekday meal per item. Many will cook and prepare other uncommon and special items specifically for Christmas eve and Christmas day. For my family, we do chicken macaroni salad, sweet ham, any special bread, maybe cheese pimiento (keso de bola with grilled red bell pepper and mayo), local hot choco drink, and fruit salad, for Christmas Eve. Christmas day will have big items that are intended to shared with relatives and friends (could be any combo of): pork or beef lechon, grilled chicken, stuffed chicken, bbqs, rice, ox tongue in creamy mushroom sauce, beef kaldereta, grilled or baked seafood items, kare-kare, potato gratin, baked macaroni, various veggie salads, fruit cake, etc.

We always had Beef Kaldereta. Selecta Ice Cream/Goldilocks or Red Ribbon Cake, Buko Salad and Yes chicken Macaroni salad is a staple to almost every house, Macaroni Salad and Buko Salad is always there plus Puto with cheese. And Fiesta Ham, Queso De Bola plus Fruits. Pansit Malabon, & Lechon Manok is also a staple. Grilled Tilapia or Grilled Bangus as well or Turbo Broiled Chicken/Pork or Beef Ribs. Christmas is a a very big deal here, bigger than birthdays, since it's once a year, the food is more, more expensive dishes, etc.

Filipino farmers till and plow the fields or harvest the crops from early dawn before sunrise to around 9 or 10 in the morning, then resume a few hours later after the sun is not so high and hot. This is why the Spanish-led Catholic church instituted dawn masses for the Advent period from Dec 16th to 24th daily, to allow the farmers and field workers to attend mass before going to work. That tradition called "Simbang Gabi" ("Mass at Night") is carried on today. Then the families eat breakfast together before the workers go out to work.

All the food on the table can be served on any occasion or celebration, so they are not really the traditional Filipino food that's prepared for noche buena. It is usually the queso de bola and the ham (the ones you couldn't get), some barbeque, round shaped fruits "for good luck", but more especially are the snacks or desserts; puto bumbong, bibingka (a lot better cooked the traditional way and NOT in an oven), sapin-sapin, and other cake pastries for the whole season.

Honestly there is no specific food for noche buena. We will just cook food and eat whatever is in the table on christmas eve. What makes it more special are the people inside the house. Family and relatives coming together on special night. Sometimes each realative has one dish they have to bring. But thank you for noticing the Philippines tradition during Christmas season starting from september. 😂 keep it up guys. God bless❤❤❤

Philippines was under Spanish colony for around 300 years, hence we have some Spanish tradition and words mixed in. So yeah, Noche Buena is kinda from our Spanish colonial background. I am envious, here now in the US, and you guys have all my usual family Noche Buena meals, except for the missing Fiesta Ham (sweet ham with a bit of pineapple flavor), also the missing Buko Salad, made from canned mixed fruits cocktail, milk, coconut, and all-purpose cream. But that is very close. You guys should try kare-kare, can be beef or pork, if you can have the pata version, that will be amazing. I like pork or pork pata version usually. Also Menudo (with liver and hotdogs), Bagnet, and Ginataang Langka with Shrimp (jackfruit cooked with coconut milk and shrimp ). You guys rock!

In our family, during Noché Buena and even in Media Noché, we make sure that we have a theme so that the food that is being serve matches with the theme. Say, we wanted to have a Seafood Theme where most of the dishes might be associated with the theme such as Shrimp Aglio Olio, then Grilled Butter Mussels and Relyenong Bangus. Then the common dishes such as Wheat Breath Sliced, Christmas Ham, and Keso De Bola.

You guys are amazing doing lots of research! 👍I hope that in a (good) way, this experience gave you a sneak peek of how Christmas Eve is celebrated in the Philippines! 😊 it's like the climax of all preparations starting on the first '-ber' month, September 🤭 Pineapple ham (or any sweet ham) is indeed one of the main menu, but it can also we replaced by other celebratory pork dishes like lechon 😉 so I think having lechon kawali (lit. Frypan lechon - since traditional lechon is usually firepit roasted) is close enough 😊👍Happy Christmas to everyone! 💕

Lechon is not the same as lechon kawali. The traditional lechon (which is typically served during special occasions like Noche Buena) is roast suckling pig. Lechon kawali is fried pork belly. "Kawali" means frying pan or wok. Jamon would be more traditionally served during Noche Buena than lechon kawali.

Filipino food is heavily influenced by Chinese and Austronesian and not Spanish, the Chinese have been one of the Philippines’ closest trading partners way before Magellan set foot on our shores, bringing the might of Spanish rule with him. The Filipino dishes and flavors are very Southeast Asian ~ Malay with East Asian Chinese influences. Japanese, Indian, Mexican, Spanish and American also influence Filipino cuisine. The Spanish may have colonized Philippines for 333 years, but the Chinese influence on Philippines continues to live on. There were already a lot of Chinese all over the Philippines, 1,000 years ago, and mixed with the Filipino population. (900s AD) That's why almost half of the Philippine population have Southern Chinese ancestry (36% ~ 40%) 🇵🇭

There is the more complex food stuff after any feast. Specifically with leftovers. The next day every grandmother will be busy reheating and reconstituting them. That is if there are leftovers. Examples are like fried fish fillets are soaked in milk & butter, battered and refried. They come out tastier. Leftover lechon baboy is usually recooked as paksiw. Basically reboiled in vinegar, sugar, garlic, laurel leaves, pepper corns. Menudo is reheated and added with more ingredients - the ones that were forgotten or unavailable at the time of cooking. Most often the food emerges more complex - un-named and far from its previous taste but most often tastier.
