The main character this time is MASAHIRO IMANISHI, the 5th generation Kyoto candy craftsman of "IMANISHI Confectionery", which manufactures Kyoto candy in Shimogyo-ku, Kyoto.
IMANISHI Confectionery was founded in the 9th year of the Meiji era, and has been making Kyoto candy for over 140 years.
Candy made from sugar and starch syrup. Compared to starch syrup, Kyoame has a higher proportion of sugar, so it does not melt easily and has a long shelf life.
In addition, by kneading the candy and incorporating air, it creates a crispy and light texture when chewed.
One of the charms of Kyoto candy is its small size and glossy and transparent appearance.
In 2003, IMANISHI launched CROCHET, a Kyoame specialty store, in order to pursue the appeal of Kyoame.
The theme of CROCHET is "color".
There are about 80 kinds of colorful and glittering Kyoto candies that combine colors. The combination of colors has a meaning according to the theme and title, and the taste of the candy itself is also changed.
