I remember when my mom use to wax on top of the jelly and jams in the jars to seal them. Does anyone else ever remember this kind of canning as well?

Loved seeing Jennings and Livie at the beginning. They are adorable. It is truly a joy to see them. When you were canning, it brought back memories of my canning days, circa 1980. I bought a 'box' of peaches and gained five lbs. that month. The ones I canned we opened at Christmas, and they were like ambrosia. No comparison to store bought. Watching you makes me want to can again. Thanks for helping us out.

I love love love plums. I also have been trying to figure out how I can use less sugar. In regards to boiling your jars, I was taught to put my clean jars in the oven. Then they are dry when you use them. I’ve not ever had a problem with that process. But, last year I canned cherry jam. My friend told me to turn the jar upside down. To remove the air, she said per her grandmother. Well, some of my jars molded. So I will not be doing that anymore. I was so bummed. This year I’m getting ready to make cherry jam again and will use the method I’ve always used. Lids and rims in hot water. Not boiling and the jars in the oven. Dry heat. I love learning from you. God speed on working all your plums. ❤

I haven't used it, but there is a product from Azure called "Pomona's Pectin" that's for low or no sugar jams and jellies. Also, I would be making some other things with those plums--BBQ sauce, pie filling, and whole plums just to eat. I know I'll be making those kinds of things when my plum tree starts producing! However, you know what your family will eat.

Plum jelly is one of my favorites! My grandma used to make it all the time. I made some for the first-time last year. I love just drinking the juice. I'm watching for a sale on them, and I probably just can up the juice so I can have it on the shelf if I want to drink it or if I want to make more jelly. Maybe you can do that too. Just put the juice in quart jars and that way it's on the shelf and not taking up any freezer space.
