So proud of you! It's ok to cry on camera. I lost my son last June 2020. I will remember to pray for you when I am missing my son. Praise is a weapon. Listen to Hope Darst. When I feel really sad I start thanking God for the time I had with my son. Thanking God for chosing me to be his mom. Thanking God that Aaron is in heaven with Him. I do love your channel. I lost my son also. 33 yrs old with two beautiful daughters. But GOD, gave me such a beautiful testimony that I have been able to tell it on live radio and in churches across my state. I teach CPR classes and many people want me to tell it to them. Which takes about 10 good minutes. I love God! I love canning. This helped me so much cause today I am going to can apple filling. I have a Harvest steam canner I seen used in other videos, how about that, is that a good way to do filling?

Same! So glad I watched. You’re in my prayer journal, Heather. ❤️🙏🏼🙌🏼 I just canned filling tonight and it oozed out under the lids when it was finished. I got online to try to figure out what I did wrong or how to re-can them if needed, and found your video! So, I’m thinking my jars sealed and are okay, despite the oozed out filling, since the tops are all concave and they’re stuck on firm. We’ll see

Watching this at 8am, you're making me so hungry. LOL Just had an idea. I like my apples sliced thinly for pies and they probably wouldn't hold up very well during canning. So was thinking of doing the sauce part and canning it in pint jars. Then when wanting an apple pie just slice up the apples and pour a jar of the sauce over them. Pour into pie shell, top and bake.

Recently I ordered clear jel online. I thought I was getting cook type but it was instant. So I canned without the clear jel and we made a pie adding the clear jel to the filling just before baking and it was fine as rain. This could be an option for those having problems with the clear jel. Bonus I have a thickener on hand at all times

Thanks for this comment. I've made apple pie filling without any thickener and then added tapioca or cornstarch later and it came out great! I guess I feel that I might use the filling for other recipes like cake or applesauce and don't want the thickener to get in the way.

💁🏻♀️Thanks for expanding my talents in the kitchen...☝🏻I started making fried apples (with a couple of anjou pears that needed consumed one way or another) to make your apple cinnamon rolls and I ended up making caramel apple filling (caramel because the sauce is dark and rich due to the unsalted butter and dark brown sugar clinging to the cooked apples)😂...🤔if it weren't so perfect and delicious for cinnamon rolls, I would most likely make an apple crisp or even a pie🥧

The vinegar is for wiping the jar rims to remove any sticky residue, and the lemon juice goes in the pie filling… don’t reverse them!🤣

I am a beginner canner. Your videos are just what I was looking for. My first canning project was with this recipe and process. I learned a lot, and all my jars sealed . I was able to extend the recipe to fill 9 quart jars. It was a family effort as I just got out of the hospital with neck surgery. We all enjoy being in the kitchen together. My mom and sister went home with a jar of pie filling. There was enough left over for a pie to enjoy that evening. Thanks for all your hard work. You have inspired me.

I've made pie filling for years but I've never heard of or seen the clear jel before. I have always used the cornstarch. The jell looks better and thicker consistency.

I’ve had a bunch of honey crisps for a couple 9f weeks, and wanted to get them can some pie filling. Went through about 5-6 before yours popped up, and it was THE one! I should have known to check your channel, having seen many of your other videos. Well, 7 sealed jars of pie filling later 🎉🎉🎉🎉🎉 I went just to the shoulder of the jar like you said, and you were SOO right about the expansion. No oozing, and all sealed great. Boy I wish I had seen this this morning when I canned strawberry filling. It expanded and didn’t seal. One jar popped the lid off. I resealed it and took some out and reprocessed it. I hope it seals. Love your channel.

Last November I followed your instructions and canned six quart jars of pie filling without a hitch. Problem was my daughters saw my jars and took off with two of them! I will be canning again in the next few days as the gala apples are currently at 77 cents lb. I'll use 3/4 galas and 1/4 Granny Smith. Thank you for making it so easy!!

Hi Heather, thankfully I have never had a issue with siphoning and I do fill the jars up to the 1" headspace mark. I think the difference is that I cut my apples smaller. Say like one of your slices I would cut into 3rds. More of a chunk than a slice. I mainly wanted mine for apple crisp and my husband loves the apples over ice cream so bite size. I don't know if that's the difference or if I've just gotten lucky so far. LOL. This year I believe I'm just going to can up slices or chunks in a light syrup or just water instead of pie filling. With just the two of us now, I rarely make a pie. Can't wait to see you do pumpkin. Have a great weekend!

I came to say the same thing! Neck, shoulder and body of the jar. I'm glad canning season is winding down!! I told my hubby after today the rest of the tomatoes get bagged and set on the curb as free! It's been a bountiful year by God's grace we have plenty.

There is an older jar... presto maybe? Called the "strong shoulder" jar. Its printed on the jar... one of the dome or bell shape at the top.

I've been watching your healing journey on Facebook and I'm so proud of your strength through all this. My heart goes out to you and I think of you every time I'm in the kitchen. As for this video, you're saving my butt! LOL. I'm in my fifties, been canning since I was 20. Can you believe I've never canned pie filling? If I hadn't watched your video, I would have blown up my bottles. I'm being gifted 8 five gallon pails of apples on Monday so I'm knew who to watch to get the best advice for making pie filling. Thankfully, I found this last year and ordered the Amish Canning Cookbook and have it on hand now that I'm going to attempt this pie filling!

I just finished my first batch of apple pie filling and it went perfect!!! I did just like you said about filling just up to the curve of the jar. No oozing or sleeping out in the canner. I used therm-flo for my apple pie filling and didn’t have as much expansion. I used my apple pie filling from 2 years ago and it was very good.

I made this pie filling this past weekend. It was the very first time I have ever made any kind of pie filling. I ended up with 15 quarts (I think I didn't count my apples correctly. ) All my jars sealed and it tasted great!!! Thank you so very much for sharing.
