In this video, we are taking acorn squash and canning it using the pressure canning method. This is an excellent way to preserve both grocery store and home-grown produce that is low acid or very dense.
We grew these acorn squashes for the first time this year. They are very easy to grow, do well in raised beds, and produce in high numbers. Pressure canning is the only safe and effective method of preservation for squash as it is low acid and very dense. Even though these are acorn squashes, this method can translate into tons of other winter squash varieties, such as butternut or pumpkin. We also demonstrate the water bath canning method, including jar prep, packing, lidding, bathing, removal and sealing. If you are new to canning and would like to learn, this video is for you.
