In this video, I take you through my butternut squash row and show you what to look for to know when to harvest your butternut squash. Then I take you through how I am going to preserve our squash 5 different ways. There is no easy way to peel and cut up these boogers. They are really firm and odd shaped. So you do the best you can, but I show you how I do mine.
I roast some for PUREE (1), then I peel, scoop out pulp and seeds, and cut up some to FREEZE (2). Then I cube up more to pressure can different ways. DRY PACKING (3), CANNING IN VEGETABLE BROTH that I had just made from alot of zucchini and squash scraps I had on hand (4), then CANNING IN A SIMPLE SYRUP of water brown sugar and cinnamon and other spices (5). I will be able to use these in so many ways and use them in different recipes according to how I preserved them. Frying, roasting, soups, stews, or just opening up a jar and using it as a side dish. Especially the simple syrup ones.

I've tried dry canning potatoes and love that so will try this with a couple of jars of squash. Also using veggie broth is great idea. Thank you. For those who felt it was too long I guess they haven't thought to just skip ahead some.

I too love your humor and personality in your kitchen. I would like to try the simple syrup, do you have any recipe or measurements for the simple syrup? I have never made that before not sure how much to add. Thank you

Sometimes my recipe is just eye balling everything. Until it feels right in my soul. Lol. I knew I had to make alot, because I had alot of butternut squash so I know I made at least a gallon. I'm sorry I don't have exact measurements. 😔 You can start out by putting the minimum of brown sugar and cinnamon and taste test as you go for flavor.

I forgot how long to pressure can my garden squash and just clicked on your channel to find out. But madam, your video had me laughing so hard! And when you said, "Blanch if you want to blanch. I don't want to blanch ", I subscribed. I just put some in the canner dry canned. I've never done that. THANK YOU! Also, thank you so much for the simple syrup idea. That's next! Loved this video!!!

​@keeperofthehomeat4dfarms I just wanted to tell you quickly, after dry canning a batch (which turned out wonderful!), I made a batch with the simple syrup. (I added cardamom, which I love). But the ones in the simple syrup are so delicious that I've just been straight up snacking on them. I guess I'm going to have to can up another batch if I want some on the shelf! I love the dry canning method, but have questions. Do you add anything or just pack it in. We have seminole pumpkin that I want to dry can as I've froze some, froze pumpkin butter, canned some in water, and with syrup. Thanks for the help!

In this video, I dry packed some and some I added different liquids like broth, water and simple syrup. I also froze some puree. Glad to help.

How do you keep squash bugs off your butternut squash? They look amazing!!! I live in Arkansas and I grow organically. I’ve tried to grow butternut squash for two years and only got 3 small ones this year 😢. Please help

Over the years we have used different things in our garden. You can use diatomaceous earth or sevin dust to sprinkle around bottoms of plants around the base. Even wood ash around the base of the plant, just not a whole bunch. We have had good luck with neem oil all through the garden especially on our tomatoes. If they get really aggressive we resort to permethrin spray we get at our local nursery. We just make sure we wash our produce really good when we harvest and start putting them up. This year was not so bad for bugs because we had one really bad freeze late in the season and I think it killed alot of bugs out. If we don't have a bad winter we have alot of bugs in the summer. Hope this helps.
