Oh man, I really wish I had been into canning 20 years ago when I had my freezers go out on me not once, but three times. I think, no I actually know that I lost at the very least $300 hundred dollars worth of food a couple of times, and one of those times I know I lost at least $500 worth of meat because I had just purchased the meat a few days prior to the power going out and being that it was when we lived in the desert out in California and it was summertime (110 degrees on a good day), there was no chance of saving any of it. I was so angry at the loss of all that food and the wasted money spent. Now I know how to both Water-bath and Pressure can and I just love it. My husband and I are in the middle of a huge canning session this week because we have gotten so far behind this year. I am disabled and it's really hard for me to do all the canning on my own (sometimes the pain is too much) and my husband and I have a system that works really good for us as we make all these recipes and get them on our shelves. But because of all the stupid CoVid layoffs, my husband has been forced to take a job that is 9-hours away, in another state and so this time around we are canning to make it easier on him when he gets back to his rented room and needs to heat up a meal for his dinner, and easier for me being alone with just our dogs for weeks on end. I just love canning and wish so much that I had started much earlier in life. Blessing to you, Merry Christmas, and also may you and your family have a safe, healthy, and prosperous year in 2022. Depends on what you're canning. It's not the jar size that's important. It's the food. For example, veggie stock is only 15 minutes whereas beef stock is 25 minutes.
