I’m hoping to make more this year. I will be trying out rhubarb and strawberry jam, I’m excited to try it.

How did you pit them? Lots of work for a large batch. And the lighter colored top third of the finished jam - I am thinking that's full of air bubbles from the blending? - does that compromise the safety of long-term shelf life? Also, I would love to can in quart jars - I have 3 cherry trees and they're bearing now - but could not find a "safe" recipe for that - you know how the official sources on safe canning won't endorse anything that hasn't been 'officially' tested, and they say do not deviate from the recipe, and I can't find one for bigger than pints. (U of Wisconsin extension as of 2015 OKs pints, says process 10 minutes for < 1000 ft and add 1 minute for > 1000 ft. ) Have you found any info on that? And I have read that it's dangerous to sterilize jars in the oven because -- "According to the USDA, sterilizing canning jars in an oven is not a safe method. The glass used in canning jars is not tempered for oven use and can explode, causing injury or damage to the oven." Or they could explode from the sudden temp change when you take them out and that would be a real nightmare, esp with small children around. Be safe my friend!!!!

I thought you were not supposed to even double the batches. I noticed your finished product looked separated. Did your jam set up?
