I usually "raw pack" my chicken, but so many amazing canners have used this parboil method, I thought this time around I would give it a try. The results are beautiful! I hope to crack into a jar soon, to taste the difference, but the visual results are beautiful! I will keep you posted!
I was inspired to give the parboil method a try thanks to Bumble Bee Junction. Their video can be found here:

Canned 15 lbs of chicken breast the other day. This was my first time canning ever! I did it the parboiled way and used Better than Buillion in my pint jars. I got 20 jars and they came out great! I was so nervous with the first batch and had your canning video guiding me along with the pressure cooking booklet. I have to do an additional 12 lbs..but froze the rest until I can get more jars. So happy! Looking forward to trying all different meats, veggies and fruit now to can. Thanks for the guidance. Oh..btw..your Honey Oat maple bread is the only bread we have eaten in 4 months! No more store bought!

Hello, I just wanted to pass along something that I learned yesterday while canning my chicken. I have always rinsed my chicken after par boiling because I hate the snow as well. I am not a fan of rinsing after parboiling because it takes time but I do it anyway. This time however I put my cut up chicken (which I do the night before) in a big bowl of cold water and swished it around. I did get clean water pretty often. When I parboiled the chicken there was MUCH less snow floating in the pan and the chicken hardly need any rinsing after. It seems to be much easier for me to do it this way. Just wanted to share!

Heather, thanks so much for the canning tips! I've been canning since my kids were small (think early 1980s), but I've never gotten around to canning meat...but it's on my agenda after the first of the year when things settle back into a routine after the holidays. I appreciate being able to see the difference between rinsing and not rinsing the chicken. I'll definitely be rinsing when I get back to canning in the new year!

Chicken looks beautiful! Tip: skim the scum off with a fine mesh sieve when it floats to the top then you won't have as much in the jars or to rinse off. I recently saw someone do this and I thought I've been using a ladle all these years. Love learning from others. I will check out Bumble Bee Junctions channel. I need all the canning help I can get, ha ha. Thank you for sharing! 👍

How cool! I used Linda's Pantry method, where I just "whitened up" the chicken chunks in a large fry pan and canned it up with chicken broth. Mine turned out looking like a cross between your rinsed and unrinsed jars. And the flavor! Amazing!

The Kneady Homesteader excellent! I don’t mind extra steps if it yields results. I ran my pressure canner’s maiden voyage today. 4 pints of chicken thigh pieces. More to go through the steps. I’m going to can some thighs this week using this method. I’ll take the skin off, blanch them and pack loosely so some broth will fit. I can’t find boneless thighs right now and lost way too much meat doing it myself. I’ll render the skins for schmaltz separately.

Yep, fully cooked! I always reheat mine thoroughly after taking it out of the jar. Some do t and use it straight out of the jar for chicken salad or what have you. Inuse mine in chicken potmpue, chicken fajitas, to throw on top of bbq chicken pizza, pulled bbq chicken sandwiches and sliders, ect. The ways are endless. I love having chicken on hand for quick easy meals, especially on busy week nights!

Hi Heather! Sorry to bother you again😎 I am new to pressure canning and just want to make sure I do this right. Was also wondering.....after the chicken is par boiled should it be cooled off before canning, or packed in jars immediately hot? (I know you mentioned rinsing after par boiling so I wasn't sure) What would this be considered? Still raw packing because chicken isn't fully cooked, or hot packed because of par boiling? Also I wanted you to know on Suttons Daze group on Facebook I gave you a shout out for your easy and wonderful homemade brown sugar!!!!!! Love your channel!!!
@TheKneadyHomesteader
@TheKneadyHomesteader 5 жыл бұрын
No bother, sistah! Yes pack it hot! Rinse it with hot water removing any of the fat remaining. Then hot pack in jars and fill your jars with hot stock. Then into a warm canner. When i hot pack i make sure the water in my canner is also hot. 😁👍🏻

Mandy from moore2life also did it the same way as Linda and she said it still leaves residue. So maybe the trick is the rinsing! But i am curious about the flavor as well. Heather, I was watching a video called "Emmy Eats UKRAINE" on some food items someone from Ukraine sent her. The first item she tried was pickled cherry tomatoes. It had sliced garlic, white peppercorns, dill, etc. The person wrote her that in Ukraine that pickled veggies were a big item. I never thought about pickling cherry tomatoes, how does that sound to you?
