I raw pack, but I've learned to put a little broth or bullion in the jar other wise it does have a tendency to have a little bit of a tuna taste.

I will definitely raw cook. I love that the meat is moist and falling apart. I do not like dry chicken. Thank you for the taste test!

You just convinced me that raw packing is the way to go . I never can before but? How can you not raw pack when it’s juicy and tender. I’d rather wash a jar then deal with dry food. ❤️❤️❤️❤️❤️

We raw packed a lot of chicken breasts this year, first time we had canned meat. The chicken was excellent. We also roasted 10 chickens, then took the meat off and canned it with the broth made from the bones, and it was excellent too. As for washing, the wife said the dishwasher did a fantastic job of cleaning up the jars, no having to re-wash any jars maybe try that?

I just use really hot, soapy water and a silicone bottle brush and my jars come out squeaky clean!

Thanks for this! I’m a relatively newer canner and have only ever done “ugly chicken.” I don’t even add broth - just a dash of boullion and herbes de provence. I wondered if I was missing out although we LOVE my canned ugly chicken and use it for every chicken salad, casserole, etc, that I make. I appreciate the comparison and I’m happy you liked the raw packed version. Now I just need to score myself some of those Tattler lids...

I was thinking it would be good to do the boneless, skinless white and dark meat together raw packed and see how the broth turns out. I'd be interested to see you try the nuggets.

Thank you for doing this. We always raw pack with broth but I couldn't help but wonder if the parcooked would taste better. In seeing this video we've decided that moist chicken is more important to us & at our age much easier! Again thank you!! 😀❤

I like them both, difficult to pick 1. I soak the ugly chicken jar a little and a bottle brush makes it easy. Thanks for all the videos!

I love the par cooked in the spicy broth of the spicy pork in the ball canning book. I think I would also like the ugly chicken for dishes I might not want the spiciness. Thank you for the comparison, it is very helpful.

The conversion to raw...I am witness to it... so excited for you. A great time saver to do raw too. Bone on skin on may be dark meat difference. I am not s fan of dark meat, but canned omg I love it.. so moist

Beauty is in the eye of the beholder and they both look good to me. Either of those are better than store bought canned chicken which in my opinion was like trying to eat cooked wood lol. TFS

I love pre cooked chicken. When I add herbs or black pepper, you can see it swirl around in the jar. I lke that. With the raw packed could possibly stick to the impurities. I just pre cook all my meats. I've gotten used to it.

I understand what you were saying about the raw pack and the park cooked I have actually tried to keep a little both on hand because sometimes I would like the chicken to stay a little bit in bitesize pieces rather than being shredded I like to get a chunk of chicken every now and then and a lot of times that's more like in a casserole type thing that has a sauce that overrides the dryer taste. Thanks for doing this and yeah really giving an honest opinion.

Love my ugly chickun! Sorry, if I'm going to cook it, I'm gonna eat it then. I am all about saving time when canning. I guess it depends on why you are canning. I just used a can for chicken alfredo. (I always use boneless skinless chicken thighs, we find dark meat to be more moist.) Not difficult to clean the jar, filled with hot water immediately after emptying. Chunks are chunks. Love you girl!

Thank you so much for doing this video! I've only ever canned naked raw-packed (no broth, no seasoning or salt, literally only raw chicken and a jar) but my mother has done par-cooked with herbs. While hers is delicious, I definitely agree that it's a slightly rougher texture and drier too-plus the addition of the herbs limits it's uses for me (not gonna make chicken enchiladas with herbs de Provence lol). Anyway, thanks so much for the open comparison. Would love to see you make nuggets too!

Great video!! I just par cooked thighs and canned them. I noticed all of my cold packed had that junk on the glass. I guess there could be a need for both types of chicken.

I find that my raw packed chicken that I can (thighs and legs) whole (with the bones) has the best flavor plus it’s so easy to pack and can. The meat comes right off the bones when I’m ready to use it in a recipe.

I've done both. The ugly chicken is more moist. I've also do this with beef tri-tip. Raw pack is more moist.

Its kind of like a piece of chuck roast thats a little less tender and stringy verses some chuck roast thats cooked to perfection in the instant pot with more tenderness. I like canning ugly chicken. Its easier and tastes better.

I wonder if it was so moist because of the broth you added? In any case, the raw pack is SO easy. Cleaning the jar is no big problem for me.

Hmm.. I'm up late canning some parboiled chicken but I have more to cann up... OK,, so you have me wondering myself about the difference, haha.. Gonna do this next batch ugly-stye lol. 'Cuz yea,, it would be great to skip that extra step.

I think you’ve found a happy medium… most other ugly chicken how-tos show full pieces packed really tightly., which makes you tear apart the pieces to get them out and it looked like you end up with shredded chicken, but You diced them and gave them some space so they stayed as separate pieces. This was a very helpful comparison for knowing how to determine what method to use.

Linda I have a question, you can legs and thighs with skin on, do u think I could do that with breast also? I love my ugly chicken but as I was watching this video I started thinking of that broth u get from the legs/thighs and wondered if that would boost the flavor even more. Thank you

I bought some bone-in skin-on breasts and they were too big to fit in the wide mouth quart jars! So I removed the bones and pressure canned just the meat. Now I'm wondering if I should have tried separating the bones and added some to each jar in order to make some bone broth. As ii is, I tossed the bones in the freezer. I *may try just a jar of bones and skin (with broth added) the next time I make some Ugly Chicken.
