I can 5 different types of beans at a time and usually it’s 15 pounds of dried beans that equals around 60 pints when I’m done. That usually works out to about 37¢ a pint, before our current inflation, which is a heck of a lot cheaper than buying a can of beans at the store.

I just did kidney beans today as well, same procedure as you. I only had 11 jars of kidney beans, so I filled up the canner with 7 more of black beans (I somehow just NEED to have a full canner!). I appreciate your reminder about the vinegar on the rims, I usually don't bother with beans, but then I forget to put any vinegar into the pot and so all my bean jars are cloudy with mineral deposits. Using vinegar on the rims will help me get vinegar in the pot! I love having jars of beans ready to go, they are so cheap and delicious, and very easy to use. Shelves full of jars of beans make me feel like a rich lady.

I recently did up chickpeas - No soaking into the Insta-pot 40 mins than I put them into the dehydrator, some I added salt etc - they came out great - and I use them not just for cooking but for snacking on

Tony, I was glad to see this, you never drag things out too long. I appreciate that. I have canned meat, fruit, jelly and jam. But never a jar if beans. I have tons of dry beans and I have bought canned beans. So I wasn't sure on the measurements. My space is limited but like you I might as well full all my jars since they take up the same amount of space. I sure do enjoy following you from Oklahoma. 108 ° faranheit here today.

That's hot! Are you having a draught the way so many states are? I must admit that while we have had more rain and cool weather here in Western Washington, this spring until last week, than anyone living can remember, we are lucky to be so moderate. I have read recently that dry beans only keep well for the first year. After that they will be tough no matter how long you cook them. That explains a few things! Heh-heh! But, canning them they will stay good for years. So, this is on my schedule this year as well!

Our son and daughter in law just bought a place in Ryan OK.. my husband went to help him put up fencing on the land it was 110° one day! They kept hydrated with electrolytes and lots of watermelon!!

In almost 50 years of canning, I've never canned dry beans! The idea of having them on hand for 3-bean salad makes sense: wax beans and green beans are already canned. And Heaven knows I have ample dry beans vacuum sealed. I did fast beans not too long ago - time to can dry beans. Thank you for the simple and quick demo! p.s. Does the same 1/2 cup to a pint work for other beans? Like navy beans, pinto beans, lima beans? TYVM 🙂

Yes, half cup for pints and a cup for quart jars!! you can go slightly less but not more!

Your canner manual should have all the information you need. I was also daunted before using my canner so I read the manual good few times before reluctantly canning my first batch of food. I was so scared the canner is going to explode I kept watching it like a newborn 😂 I felt silly after because pressure canning is really straightforward. Once you get over the initial fear you'll see there's nothing to be worried about. Well, you'll be wondering where to put all that lovely food you canned as you'll soon run out of space 😁 Be brave and good luck with it.

I've been following you for 2 weeks now. Bought a vacuum sealer, oxygen absorbers, plastic and mylar bags and a dehydrator. I live in a small 23' travel trailer, and have been stocking up staples, and learning how to extend the shelf life of the dry goods. Also in my local garden bed am growing carrots, beans, green onions, basil, parsley and potatoes. Watching your videos has given me the knowledge of how much space I will save storing these items after dehydration. Question: I have some pint jars and am wondering how to can and pressurize dry items after dehydration. Do you have a video on this? I watched your dehydrated carrots and potatoes video, but it didn't show the canning of dehydrated foods. Thanks for all your videos, and bless you for sharing your wealth of skills and knowledge.

I watched Heidi at Rain Country and took her advice to purchase a brake bleeder( hand pump) that is quite easy to use to reaseal dry storage.It’s great to have on hand in case of loss of electric which we often have in our rural area.

Toni if the bunnies are eating your beans you need to move the bunnies to your freezer or perhaps a canning jar. Canning dried beans is one of my favorite items to can. Hey Toni you didn't show us the finished jars.

If it's really old and has rubber seals, be sure to check the seals for dry rot or cracking. It's all replaceable.

Hi there, I hope you can help me. I don't have a canner because I live on my own and have no need now. I do make marmalade and hot sweet chili sauce. I only have 6 Ball jars and I find that's enough for me. Recently I noticed that one of the jar lids on the chili had specks of discolouration like it was being affected by the vinegar. So I bought some replacement ones. I replaced the one that was affected but after a couple of weeks, the same thing happened. Have I bought inferior lids as they were not expensive? (I live in the UK)

things like vinegar and salt are very corrosive..If you are not canning/preserving your jars of chilli sauce, but just making and refrigerating it, you may want to invest in plastic lids for the jars that contain vinegar..

I can many kinds of beans like this, except I don't do kidney beans this way. I don't think people are aware that Kidney beans are high in PHA which is very toxic even in small quantities of under-cooked beans, so just be really careful and make sure they're cooked really well. :)

I was pretty sure that kidney beans needed an overnight soak and a water change, or a one hour boil and a water change before canning due to the PHA toxicity.

@@nancyst.john-smith3891 I'm not sure if there is an exact requirement in terms of soaking and cooking for kidney beans, but I know the PHA level is higher than any other dried bean and it does necessitate extra caution to make sure they're cooked sufficiently. Therefore, I choose not to cook+can them this way because there's a higher chance of them not being cooked properly with enough fresh water. This canning method works wonderfully for many other types of beans but I personally just wouldn't risk it with kidney beans.

Anyone that has an instant pot has taken dry beans and cooked them until they’re soft in less than an hour. How would a pressure canning method like this be any different? I’m new at pressure canning so I don’t understand the difference- aren’t they both cooking under pressure?

@@anitamarshall7528 For the same reason an Instant Pot is not safe for canning. An instant pot is not using jars of beans. A pressure canner to ensure the safety for long term storage must reach 240 degrees internally of the product (beans) for a set amount of time. It's scientific research.
