I put my tomato skins in my dehydrator then powdered them up and I’ll use them in soups!

I LOVE that idea! I’ve found that they lose their vibrant color within a couple of months when dehydrated and powdered, so make sure it use it up quickly!

A tip that I learned at a prepping class, was to heat my jars in the oven at 275 for at least 15 min, and then you don't have to deal with putting them in water beforehand. :). I love your videos!!!

Very nice real canning. I never like to drain all that liquid away either....when I can frozen tomatoes like that I let that tomatoe juice start cooking down with the lid off, as I prep the tomatoes....then add all the diced tomatoes to the liquid and then add it to the jars. But you are right, you can always figure things out. Sometimes after the fact I think hmmmm....things really were not 100% correct, but it still cans up.

I love your idea of cooking down the liquid first to concentrate the flavors! Brilliant! Haha, yep, that’s how it goes sometimes. Just have to roll with the punches. As long as the pH is low enough and the lids seal, you really can’t screw it up 😆

I am new to canning and gardening for that matter. Well not gardening as I've done it for years but quit about 7 due to the health issues. Anyhow, I have so many tomatoes last year, while I was at my sickest, and my husband just put them in bags and did not take the tops off. Are all of these tomatoes bad or can I still use them? Does anyone know??

I also don't have a pressure canner so water bathing was the method I need to use. Presto...up you came. Even with you OOPSIE, it was so informative and I'll be doing this tomorrow. Great video! Fun fact that I just learned; it is no longer recommended to boil the canning lids as it can weaken the seals and cause a premature false seal.

Hi, thanks for sharing! I just want to say that when this has happened to me, due to a brain fart, I just ran hot tap water over the jars prior to putting them into the canner so that there is no temperature shock to the jars. I would start with warm then turn the tap to hot... I never had an issue doing it that way 🙂

Thanks for the video. When we first started canning tomatoes we used a water bath like you, a number of years ago we switched to a pressure canner which is much quicker, and I feel safer. This year is our first freezing them interested to see how that works.

Thank you! I’m new to canning and this was very helpful. I didn’t think about thawing in bowls to save the liquid. I might freeze the extra for cooking pasta! We had a lot of tomatoes ready just as school started and as a teacher I had no time to can them so in the freezer they went. A long weekend is here and I need room in the freezer for corn so out come the tomatoes. Sauce, ketchup and maybe crushed tomatoes? Will see how much what I froze turns out to be!

When I make my passata I use the whole tomato including skins. After I cook the tomatoes I put it through the blender and the sauce is delicious. Usually more nutrients in the skins, I'm guessing it's same with tomatoes?

No Stop! Don’t start over. You have freezer😢 space because you had all of the tomatoes in there before. Freeze the extra juice in small amounts 1/2 or 1 cup amounts your choice. Add this to your food as if it was in each can. Simple and easy right?

Could you have put the full jars on a cookie sheet & put them in the oven a little bit to get them hot enough to go in the hot canner? Also, did you poke a hole in the bottom of the bags of frozen tomatoes to drain that liquid into the bowl as you thawed them? I have about 10 bags of whole tomatoes in the freezer right now that i need to can. Would I still be able to do this recipe with whole frozen tomatoes? This is the first time I have frozen them & will be only the second time canning them.

I don’t think I would try baking the jars, it would take a long time for the heat to penetrate. No, I didn’t poke any holes in the bags, the liquid just naturally leaked out so definitely keep the bags in bowls! Yep, you can use whole tomatoes

Get a cheap pH Meter. No need to ruin the tomatoes with Vinegar/Citric Acid if they're already in the safe canning zone.

I loved this video! I have never dove into the world of canning, but I’ve been doing lots of freezing of garden produce. Diced tomatoes are my #1 staple in the freezer. Q: the liquid in the bowls, is that just the inside liquid that seeped out or did you thaw them in a water bath?

That’s just the liquid that naturally came out of the tomatoes when they thawed out. It’s a surprising amount!
