As a food engineer I have to point out that the salt is not only for taste reasons, the salt helps to distribute evenly the heat within the content.

Total Newbie here-- as in never, ever canned anything!! Thank you so much for breaking it down and keeping it simple. So many times if a Newbie asks questions on FB etc. they are made to feel stupid for not knowing. You NEVER do that and you don't know how much that means. I say-- You weren't born knowing it all, you had to learn from somewhere---I'm learning from you--THANK YOU!!! 🥰 🥰 🥰

Remember to let the canner “vent” for 10 minutes before putting the pressure regulator on, to allow steam to displace the air inside the canner. Great video! I love your perspectives on just about everything! ❤️

I add a little vinegar to my canner. We have really hard water and the vinegar prevents the scum ..... I don't know what it's called, on the jars.

Update: So, I ran out of pint size jars, but I several half pints. I used 12 of them, but 1 didn't seal. I'm finally over my canning fears and the best part is, my oldest daughter (11 yes old), was willing to help lol! She insisted we make apple butter this weekend, so looks like I have to get more jars! Thank you so much for the videos!

A few weeks back I did my 1st preservation of meat, and this past weekend some turkey. My husband sees how beautiful the turkey looks yet was concerned about the Hamburg. I had to remind him that the fat is what gives it flavor, which he knows when he is cooking. It then clicked. This morning, while having our morning coffee, as I like to browse through what I might want to watch, he watched along with me. I recently become a follower, and what I love, is that you are "real". No fluff, simply "real". You get it, as you don't "sweat the small stuff" Love your style!! Keep on being you and being real.

My brother in law is a trucker. The lady that owns a trucking company who just bought my daughters house are all saying there’s suppose to be a truckers strike on Sept 7 th…..I will be canning meat out of my freezer this weekend, especially hamburger and sausage which I cook in many recipes. I’ve been dehydrating frozen veggies I had in the freezer to make room…wow a large bag of corn shrinks to a small freezer bag….thanks for your constant inspiration…those of us who listen feel blessed to have a Kitchen Fairy like you to keep us up lifted…. I just saw whereas farms in West Virginia have had their crops destroyed by army worms…….without hay how will they feed their livestock…..oh I know the higher ups will say sell them….at a loss…..they can’t but they might have to…….. America needs to look up to the sky and pray to God, pray our country stays strong, stays level headed and works at preparing for the worse and praying for the best.

You have such a beautiful smile🙂 I used to do so much canning, but haven't in years, since I live in a small apartment and don't have room. But I canned meats too, especially deer and several times pork. It was always pieces, never ground, and it worked great in soups and stews. I mostly used quart jars due to family size. Thank you for sharing your knowledge, and for your amazing kindness to be willing to help. God bless you and your family is my prayer 🙏

When my wife left me she left all her freezer burned beef and vegetables for me. I canned vegetable beef soup with all that stuff. It was really good. Freezer burned stuff is just dehydrated. As long as it has been kept frozen it should be ok. Mom called it dish rag soup because she said it tasted like I boiled the dishrag to make it. She said people during the depression boiled the dish rag to make soup. She always had this saying that she was hungry enough to eat the wall paper off the wall. Back then they really did. Wall paper paste back in the day was made from wheat flour. So the peeled the wall paper off and ate it.

Thank you for doing this. I really appreciate you taking the time to explain, teach, and hopefully give some of a little courage. I have a pressure canner that I bought over 10 years ago, but have never used. I do tons of water bath canning, but my grandmother made me leary of pressure canning. She would teach me and let me help with all the water bath canning, but would shoo all of us out of the kitchen if she was pressure canning. It scared her, because she actually knew an older lady that had an explosion. I know that the canners nowadays have all kinds of safety measures, but I have just kept putting it off. I'm hoping that if I get enough information it will give me the courage to take a step and jump into the deep end.

Thank you for reminding me how to can! I used to do a lot of it back in the day. Mostly just fruit jams, tomato sauce, and that sort of thing. I had to get rid of all of it when I moved into a condo about 15 years ago. Now I'm remarried, and live in a big house, so I can store some new supplies! I think the pressure canner might be out of my pay grade, but the hot water bath still seems do-able. I'm asking for canning supplies for Christmas!!

I had only helped my mom can just about everything from the garden - but, never on my own. I just ordered a pressure cooker canner online before they are all gone. I'm going to do ground beef first. YAY! Thank you for the inspirational, educational, and practical tips.

I thoroughly enjoyed watching your canning video today. I had my mother’s old pressure canner, but between finding a new gasket and getting the gauge calibrated, I decided to buy my own. I have an induction range that only works with either stainless steel or cast iron cookware. I knew aluminum wouldn’t work, and most canners are aluminum. So, I searched and found a Presto pressure canner that has a stainless steel bottom! I am VERY careful with that big canner being on that stove top, believe me! I have been successful canning so far this summer, all the steps are coming back to me since I haven’t used a pressure canner in decades. I needed a bigger water bath canner than what I had been using these past few years, but couldn’t use the old speckle ware water bath canner because it is way too big. I know that would work on an induction stove, but decided to try out the Ball electric water bath canner. I have loved it! I can put it anywhere on my counters, and it doesn’t get the surrounding area hot. So I have been experimenting this summer and enjoying my canning this year. I wish everybody great success in their canning! 👍

Thank you so so much !!!! It looks like I can do it but just the set up alone was a lot of work. I know I’m not the old gal that didn’t learn to can . Even though Mama tried, Mama tried to teach me canning, I didn’t see the need to know. Boy howdy I was wrong. God bless y’all for coming back for the newbies!!!! 😎

I decided to start canning and then I found your videos. My mom just dropped a bunch of stuff off. She is expecting to get some meals out of me. She has only done veggies & jelly. 😁

Patara! Thank you for this video. It helps so much to see how it’s done especially to a newbie like me. I guess I’m a late bloomer to prepping and running behind. We have some pork and beef coming our way soon. I don’t have room in my freezer for it so I need to can what’s in there right now. I hope you will be able to do more canning videos. I sure appreciate you!

I have canned forever but not meats. Thank you for this. I have 2 freezers full of food. If we should lose power for long, I'd be sunk. Thanks!

Thank you for another great video. Love canning meats. So convenient to go to the pantry and grab a jar for supper. Would love to have an All American canner...maybe one day. :)

Patara, I first found you by looking for info on raising chickens. I have come to love your videos and all of the info you give. Thank you so very much for everything. My mom, aunts and grandmas used to can everything when I was growing up. I'm so excited to get serious about canning again. I just ordered my pressure canner and more wide mouth jars. I can hardly wait!
