Oh my goodness... LOL Yes, my arms and shoulders had more strength in them when I did this video compared to now. It takes me a bit longer to do manual tasks like that now and I guess it's my exercise for the day. :)

don't waste your peels freeze them for later if you don't have time right away, can make candied peel or even lemon marmalade out of them which is also divine

I make loads of lemon curd. I use my food processor to whisk it all together. Always use the microwave. To cook. It’s silky smooth. Takes max 15 minutes and is so smooth. I mainly use it with home made Greek yogurt made in the Instant pot Delicious and so much easier. For me it s the best

@@OuttheBackDoor I love how you have the patience to make this by hand. We live in South Africa, so we often have no power because of load shedding. It’s a challenge ! I feel your pain and would live to taste your goodies. You certainly know what you are doing. Thanks for sharing. I’ve only got into food preservation recently. And I don’t need to store food. We live very close to our shopping centre.

Hi Sadie Girl. I've always got canned lemon juice in the pantry. I may not have lemons to zest, but I still make the lemon curd with the canned lemon juice. I give it a "bump" with a few drops of lemon essential oil when I don't have lemons to zest. Happy canning and have a blessed weekend. Mickey 😊

Hi Tia. I love having this in the pantry! I use it on cake, toast & English muffins, pancakes, turnovers, thumb print cookie filling, and straight out of the jar and into my mouth! I'm sure I forgot a few other ways I use it but that's why I can it. 😊

I just bought a large bag of lemons and typically freeze lemon juice in itty bitty containers and place them in little trays in my freezer. They work out great but take up so much room. I'm going to defrost them and can them! Thank you for that tip. I loved your easy to follow instructions on making lemon curd and can't wait to steamcan some! My mouth is watering think about it! Thank you.

Wow, it seems every time I do a search to see if I can make and actually can something, YOUR channel pops up! I'm a fairly new subscriber, so I haven't seen all your content, but I LOVE your channel!!! I plan on making lemon curd (for the 1st time), and now can it!!! I buy lemon curd all the time, but the price has gotten out of control! I love it on toast. Oh, and BTW, I also have several of your boil-a-bag omelets in my freezer. Makes a great, easy breakfast! Great timing, thank you! I have 3 lemon trees that are loaded, and my chickens are laying again... time to get busy. Lemon curd is fantastic to just eat by the spoonful... I suppose a lemon meringue pie would be appropriate.

Hi VagabondAnne. Oh color my green! Perfect timing is right and you have your own lemon trees?! Wonderful! Besides pie or eating it straight out of the jar, I use it to make turnovers, on English muffins, on cake, on pancakes & waffles, and with ice cream. I find any excuse to eat it. 🤭😊

Oh yum! Lemon is my favorite flavor!! I have never had lemon curd before, but it sounds and looks delightful! I couldn't bring myself to tossing the peels from your juice portion. I would have scraped out the membrane from each of the lemons, sliced them up and boiled them to get rid of the bitterness of the pith before adding sugar and making candied lemon peel. Now I'm going to be thinking about lemon goodness all day! :)

Hi Sew and Tell. Love your name! Several people said they were going to make candied lemon peel. I suppose I could have made lemon extract from them. It's been a while since I made this video and I'm waiting for lemons to go on sale again. Lemon curd is addicting in our household! I also smear this on homemade toasted sourdough bagels for breakfast. I hope you give it a try! 😊

That looks so delicious. Lemon is one of my favorite flavors.😊 I would absolutely use that curd for a Lemon Meringue pie or in a Trifle. It's a little disappointing that the shelf life is so short...

Pamela, the canning book said it would only last 6 months for a shelf life. I think they said that because we would have eaten all by then! 🤣 No, seriously, I've had lemon curd in the pantry up to 2 years and it was good!

You can put your lemon peels in pot of water turn on low bring to slow boil this makes you house smell great .

Love lemon curd! Maybe peel the outer rind and then blend it up to make it go quicker? Would you mind posting the doubled recipe in the description or comments? Brilliant way to steam can!

Hi Amy. I love lemon anything... better than chocolate! 🤭 To me it would be much faster using a zest peeler or grater. You don't want any of the white of the peel in it because it will leave a bitter taste. Steam canning with my PC has taken over WB canning for me because I always can in large amounts. I can double and triple stack in my large PC and use a small amount of water. It doesn't mean you can't WB can the lemon curd though. 😊

Many years ago, I'm talking maybe 30 years?, I had a quilting friend in Australia and we would swap fabrics sometimes. Well one time she sent me a very small jar of Vegemite to try and I loved it! Now I order it through Amazon. BTW, I'm in the USA. 😉

@@OuttheBackDoor Thank you Mickey for explaining that. I wasn't really sure how KZbin works as far as pushing out your videos to greater audiences. I didn't have time to watch the whole lemon curd video this morning but definitely will be doing so soon since I want to grab some lemons and make curd from them. When you find quality videos that are well researched and presented as well as yours are, I really want others to find them. And usually when I start to implement one of your procedures I'll view it a few times...lol. Now I do have a habit of watching a video right up to almost the end and I'll stop it so I can read through the comments to see if there is more to learn from other viewers. Since I didn't 100% complete the view....does that not count as a complete view....say I stop it at about 99%? Thanks for your help and I'll do all I can to keep your ratings growing. Love ya buddy.

It's the minutes watched that are counted. Even if you only watch for 5 minutes, that's counted. The more minutes watched, the more they push it out. 😉 Do you have Myer lemons?

@@OuttheBackDoor I am close to the Gulf Coast here in Texas and can grow citrus but have to really watch some of the freezes. A friend keeps her citrus in containers and rolls them into the garage during freezes. They produce abundantly. I would like to build a little building specifically for that....I believe it would be easier than trying to wrap and bundle them. I have Meyer lemon, Cara Cara Orange, key lime, mandarine orange, and kumquat. A few years ago I lost all the citrus I had...all I just named plus grapefruit, lisbon lemon and tangerine orange....only the kumquat survived. They are pretty tough and although lots of folks do not care for them, their juice and jelly is awesome. Ok....I'm learning on the youtube thing. I think it really helps to push out the videos that are quality. When I first started watching there were some lou lou presenters with very poor information. So to help viewers get quality information like yours...I'll do all I can, Mickey. Jesus bless.

@@sandrarichardson2713 You have no idea how I was drooling while I read of all your luscious fruits you grow! We lost all of our blossoms on the fruit trees 2 springs ago. It dropped down into the 20's 2 mornings in a row and froze all the blossoms. People everywhere lost their gardens because this was the end of May! I wonder if I could grown a Meyer lemon in the house??? And I adore key limes too! I appreciate your help on "promoting" the channel. That goes for all channels! Sometimes I just listen to someone's video while I'm working in the kitchen. If I like it, I save it and give them a thumbs up. Sometimes I'll comment if something really strikes me. But they have also gotten minutes watched by me just listening. All of it adds up and helps. We also get paid for allowing ads to run on our videos. I realize most viewers don't care to watch them, me included, but it's supporting the channel in another way. I'm far from making this a full time job and being able to live off the income, but every little bit helps and I'll get there some day, God willing - not mine. Hello! Just found your site about a week ago. You have answered a lot of questions I had about canning dairy products. Thank you! Now, another question; my husband and I are on Keto, with great results. We’d love to have lemon curd on hand, curious as to whether you’ve ever tried canning with allulose. It’s great to bake with, but I’ve had trouble finding anyone who cans with it. Do you or do you know anyone? Looking forward to more of your great videos. Thanks again !

Hi Green Eyes. Kudos on the Keto! I have never used allulose. If you're able to use it in equal amounts or close to as sugar, I'm (guessing) it should work in canning. Since you aren't finding any answers online, I suggest doing a very small batch of something (1 or 2 small jars) to test it to see if it would be suitable as a sugar replacement. I'm sorry I can't give you any definite answer! 😊

Hi Bev. My pressure cooker/canners are All American and made in Wisconsin. They are cast aluminum and I love them! I've got 3 sizes; A921 (the one in this video), A930, and A941 (I use the majority of the time for big batches). Look up All American pressure canners or go directly to their site and you'll be able to see all that are available. I know last year there was a backorder on almost all of them. I hope this helps. 😊

Hi Pam. I have never canned custard. When breaking down the ingredients and pH levels of the ingredients, I feel that this may not be a safe food to WB can. You would need to process it for such a long period that I feel that the end result, the texture, wouldn't be palatable. 😊

I don't know if I heard correctly. Are you storing your steamed canned lemon curd and lemon juice in the refrigerator or your pantry? Also, what you you estimate the shelf life to be if you stored it in your pantry?

Hi Victorian Gardens Cattery. I'm storing them in the pantry. The recipe I followed said 6 months for shelf life but I had some a little over a year old and it was good. I've got home canned lemon juice that's 2 years old in the pantry, and although the "solids" have separated and settled to the bottom, like any 100% commercial lemon juice would do, I just shake the jar real well before I'm going to use it. I hope this helps. 😊

You're confusing me. 🤔 Where does the blue come from? Seriously though, if you wanted you could use food dye to make it green but I try to stay away from things like that. That's why I mentioned it will be about the same color as the lemon curd. 😊

Hi Christina. Lemon curd only needs to be WB canned. When I have many jars to can, I'll use my PC as a steam canner so I don't need to use as much water when I'm double or triple stacking layers. I share how I do this process when canning OJ. kzbin.info/www/bejne/eYbGpIaQZbR6h6csi=VPP_N1KTAUrt0SdZ

Hi Paula. That depends on how fast you eat it. 🤭 No, really I think I've had an open jar in the refrigerator about 5 or 6 days before I finished the jar. Also, the recipe I had followed said shelf life 6 months. It lied. I had some in the pantry that was over 18 months old and it was still good. 😊

I didn’t catch whether you can put the finished product on your pantry shelf or if it must be placed into the fridge?????

Hi Andy. Once it's been water bath canned it may be kept in the pantry. Refrigeration is required after opening the jar. 😊
