Love this idea of canning lemon curd. Perfect to go with my homemade yogurt. I recall you referring to your corn broth as Sunshine in a jar as well. You should collect a Sunshine in a jar playlist 😁

Yes yes Yes!! I have to can our daily food here in Clearwater, FL during the summer. 115 heat index is too hot to turn on anything!! This will be great over ice cream during those times! We are lemon fanatics, thank you!!

Yes, I agree just as soon make it fresh because we eat it up so fast also we like ours much thicker (Irish lemon curd lover) and with real lemon juice. I find jarred lemon just not the same. Great video just the same and thanks for making it.

Thank you for explaining the process. Given that it doesn't have a long shelf life I'm glad the recipe is for a small amount. I know that I could eat it all in a month but this deserves to be a special treat so I will ration it out.

So you finally made the lemon curd, delicious isn't it. Not sure if you missed the step to let the lemon zest sit in the sugar for 30 minutes. I do some in 1/2 pints, just enough when you only need a little bit and notice no difference when canning. I have been making this for more than 15 years and found it in some off the wall canning book but couldn't believe it when I found it was actually a safe canning recipe. Great demo Carol. This is actually on my list to do this week.

Yes, after jarring but you will need about a 1” - 1 1/2” headspace for freezing

The recipe calls for large eggs. The large eggs I buy look rather small for a large, they’re organic free range. Would this be a problem? Also, it calls for a candy thermometer, I have a meat thermometer, would that work or is an actual candy thermometer needed?
