Wonderful to see a young man preserving food. Times are tough and food falls from trees everyday. In our little town, trees of apricots are wasted every year. Learning these skills can make a big difference in surviving the winter ahead or becoming dependent on others. My parents generation didn't eat if they didn't store food . Canning drying and now in this past 50 years freezing has been so helpful. Congrats young fella, your Mom must be very proud of you.😍😍

If you have a ton of pears you can blanch them for about 15 seconds 6 or 7 pears at a time and the skin just rolls off with your fingers. Very quick and easy.

I used your video as a starting point, read some other information online and managed to can three quarts of pears! They look good in the jars, hopefully they will taste good when we open the jars and eat them. I gave a jar to our next door neighbors. Thank you so much for the video. The pears from the tree in our backyard that usually go to waste will now be a nice treat later this fall or winter!

If you haven't already, invest in the Ball Blue Book of canning. Or join some canning groups for more information. Having a funnel would also make your life easier. When you "burp" the contents of the jars, use a non metallic spatula so it doesn't leave scratches on the inside of the jars, which lead to them possibly breaking. Those were pint jars and you have to go by specified times for processing for safety, and those times change for what your altitude is-add 5 minutes on for every 1000 feet. Also, make sure you simmer your lids for 10 minutes-don't boil them! This gets the seal softer and sanitizes them. You don't want bacteria on the inside of the lids! A jar lifter would help get the jars in the canner safely and also so you don't disrupt the lid and ring when you take the jars out. And I can't really tell from the video, but you will want something on the bottom of it so the jars do not touch the bottom. You can use twisty ties to make a ring of canning rings if you don't get an actual waterbath canning kit. Sorry for the rant, but I see people canning wrong all the time and wanted to make sure you get proper and safe information!

This is not critical, but when I can pears I like the quarter them rather than halve them simply so they fit into the jars more efficiently. Mind you I have 7 mature pear trees, so I can lots of pears, and jars and sugar get expensive.

After you have a bowl of peels and cores, put them in a bucket, pour boiling sugar water over them, let cool overnight, then put in yeast and in a couple of weeks you'll have pear wine. Nothing fancy, but really good.

The NCHFP website is a wonderful resource! A few notes to keep in mind when canning . Jars no longer need to be sterilized prior to canning if they are process 10 min or longer. If you blanch fruit in boiling water ( dip in boiling water for a just a little bit) then put in cold water the skins will rub off with your fingers. Jars should be kept hot in water until ready to fill one at at a time. They should also hot when adding product and when placing in the hot water bath. Jars should also be sitting on a towel to avoid them setting on a cold counter when filling. Jars should be de-bubbled with a no- metallic tool ( wooden chopstick works well) prior to wiping rims and placing lids and rings on ( this prevents damage to the jars which can cause breakage ). Rims should be wiped clean with a wet rag or paper towel before placing the lid on. Pint jars which you have should be hot water bathed in boiling water for 20 min. Quart jars 25 min. There should be 1-2 inches of water over the top of the jars during the entire processing time. After time is up uncover the pot and let jars sit for 10 min with the heat off before removing ( it prevents siphoning) and placing on a towel to cool. Allow to cool for 24 hrs uncovered before checking seals. Remove rings, check seals ( the button in the center should be depressed) wash jars, label, and store in a cool dry place with rings off for up to 1 yr. Any jars that didn't seal can be reprocessed or stored in the fridge and used as soon as possible.

@@staceywood4013 it’s really not that difficult. If you follow tested recipes they tell you exactly what to do step by step. Start out with the basic recipe like tomatoes. When I started canning on my own I made apple jelly from store bought juice. Choose something you’ll enjoy eating and has just a few ingredients. You can do it. There are videos on KZbin. Ann Crum is a fantastic one to follow she’s an admin for the canning group.

When you put the jars in your "canner", make sure you have a dish cloth in the bottom of you pan so there won't be direct heat on your jars. Nice video, you make preserving very attainable to the average person who may have not had exposure to this.

Nice how to. Just a couple of things though. Those were pint jars and it does matter if they are pints or quarts because the canning times are based on the size of the jars. The same source you listed for making the syrup also has a page on canning pear halves and lists the times as 20 minutes for pints and 25 minutes for quarts at 0 to 1000 ft. Were I am it's 6000 ft and my times would be 35 minutes for pints and 40 for quarts. It is a good site the FDA sends people there to know safe canning.

Dunk pears in scalding water for 25 seconds and then put in ice water n the peels will come off w a little rubbing. Lots easier!

ok I cann 50+ quarts of pear each year. this year we had a hige amount of tree fruit. Try adding amaretto or ginger brandy to your syrup for a more adult taste. it doesnt make them taste bad and you cant taste the alcohol. I love it just google brandied pears or look into the ball canning book

garden book,But I really do have a question ,I live in southern Va. and I started a compost bin a few weeks ago.With winter coming I am wondering if I need to cover it or will it be ok? It is next to my garage so it is kind of blocked from wind.It gets about 4 to 6 hours of sun a day.I know it will slow down in cooking over the winter,just not sure about covering it.Any help would be great.BTW I have told my daughter about your vlog and she is now a follower as well.Thanks for the help Lisa

if you do this I believe the water will leech all the sugars out of the fruit. Thats why it's always done in sweet water. If your concerned, perhaps do it in pear juice.

This is my first time canning pears...My mom told me you don't have to cook the pears for 5 minutes. You do have to do the water bath for 20 thou. why do you cook them for 5 minutes before?

As long as you boil-sterilize them after canning, it should be fine without anything added, but they'll go bad after opening. I'd guess a week, maybe 2, refrigerated.

Those pears look a bit green..I prefer ripe pears and if they get a little brown that means to me they maybe even riper with better flavor... In fact, I was cinnamon and honey so you can't tell if they browned or not... And bruised pears can still be great for pear pie. Again, crunchy green pears do not have the same great flavor as riped pears.

Your jars is pint jars and the ring lines represents inches you got a 1 in half inch quarter inch that's what everyone goes by when they're filling their jars put the product that they're canning and then plus the liquid so if your recipe for canning say pears says fill the jar with the fruit to one inch and then the liquid to half inch. So that you're cone lines that's how measured in inches like I said one inch half inch quarter inch that's how the ring lines are measured. Not trying to be critical just giving you that information so the next time you do a canning video you'll know that the ring lines is measured in inches and as far as your charge goes there's half pint which most people use for putting up jelly then you got your full pint then you got your quarts your quartz is the largest jars next size down pint which you were using in the smallest is the half pint.
