My WIC dietitian told me about a hack some people do. She said to add a can of drained beans to your ground beef or whatever meat you’re using when you start browning it. Apparently it takes the texture of ground meat and doubles your meat amount! I haven’t tried it yet but what a great way to stretch food while adding nourishing benefits!

I do this but with red lentils.. i just wash them and put them in raw. They take only about 15mins to cook so if it's like a meat sauce or something it works great 🥰

Hey Lisa, I don’t know if you do this, but making your own pasta is a great way to use up eggs! Even making 1 serving for each member in my small family uses 4 eggs, so for your family you could easily use 20 eggs!

My mother in law refuses to cook in smaller batches even tho they are empty nesters now😅she will cook up a storm and divide it between us and it’s such a blessing some days especially now that I’m almost due with my next. Kiddos eat so much more often than hubby and I and some days it’s exaughsting to keep up with 😊

I have so many cuts of meat we don't like either and have been thinking about a good old fashioned meat grinder for the past year. Well God is good! He cares about the little and the big things. I not so randomly saw a manual grinder at our local goodwill ❤. Now I can use up the meat cuts I've been avoiding. 😂

Another good way to use ham hocks is making southern soup beans. I put pinto beans and ham hocks on the stove and cook till a soup like consistency my kids love it.

Spaetzle or drop noodles are great to add to vegi soup to make it hearty. Egg based, so you still get extra protein. The mix is like a thick batter and then it's dropped by the spoonful into hot broth, water or soup . Cooks in 10 minutes ❤ So delicious for a fall lunch or dinner.

I love how you don’t seem to over wash/peel veg and fruit Lisa. My Dad used to provide us with loads of organic produce and I just used it as it was (unless it was muddy) and I’ve carried on in this way. He always told me peeling and over boiling produce meant you lost a lot of the goodness 😍

I've been making salmon cakes for years. Please don't be afraid to leave the bones, skin and discs from the can. It's a great source of calcium. When you mash it with a fork , it dissinagrates and you can't see it.❤

I haven't been doing the refrigerator rise, it just works better for me. If you plan a bit, sourdough isn't difficult if you work outside the home.
